Happy Earth Day friends!

Your earth-friendly tips are awesome guys! Be sure to enter the giveaway and keep ’em coming!! πŸ™‚

Here are some great ones so far:

  • Bringing reusable bags to the grocery store
  • Driving only 1 car per household or walking/biking!
  • Recycling
  • Taking shorter showers and using less water
  • Hang drying clothes
  • Unplugging appliances when not in use
  • Using reusable snack bags (there is even a giveaway going on here!)
  • Reusable water bottles

Great idea guys πŸ˜€ I do much of the above as well. In fact, I am always taking things out of our kitchen trash can and putting them in the recycling!

Now on to the junky part of this post. The past few weeks have had quite a fair number of indulgences.

Starting in Vegas with a little bit too many of these bad boys…

25185 412160880820 507740820 5589413 6688962 n

And too many blue cups

25185 412159510820 507740820 5589341 7990533 n

Then came Easter, and with it pies

IMG 7158-1

Cookies

IMG 7159

Endless weeks of chocolate (among 5 roommates – we accumulated lots of Easter packages! πŸ˜‰ )

IMG 7156

IMG 7157

IMG 7251

IMG 7253

And when this chocolate finally died down, my birthday came a knockin’! More of this

IMG 1307-1

And lots of this:

IMG 1302

IMG 7254-1

And can’t forget all the treats at nannying I manage to snack on occasionally.

IMG 7406-1

And somehow ice cream found its way to my freezer this past weekend:

IMG 7398-1

See what I mean?!

I obviously love my sweets, and am all for enjoying them! But it’s quite unfortunate when your pants are too tight. And my stomach has been hurting every morning (I often times have stomach problems, and I’m not sure what exactly this is due to. But I’m going to try and eliminate late night eating and ice cream right before bed to see if it’s possibly related).

First step – I’m going to try and go through just 1 day without any sweets. I literally haven’t done this in who-knows-how-long, but it’s my challenge for the day!

Even though I do have my new job at Old Navy, and jeans are more afforadable now, I don’t want to have to buy larger sized jeans! πŸ˜‰

In other news, I managed to snag my roommates near empty jar of nut butter as she was throwing it away. NO! Trash to her, valuables to me πŸ˜‰

IMG 7401-1

Yesssss.

IMG 7164

  • 1/3 cup oats + 1/4 cup wheat bran + 1 cup almond milk
  • Cinnamon & maple syrup
  • 1 egg
  • 2 spoonfuls yogurt stirred in at end
  • More nut butter and whipped cream cheese on top
  • Sprinkling of granola (post-picture)

IMG 7165-1

Yesterday’s lunch – Southwestern soup with cheese & chips.

IMG 7405-1

And Costco chicken burger chopped up with mustard & BBQ sauce (for more filling protein)

IMG 7402-1

I tried the blueberry Yoplait Greek yogurt!

IMG 7409-1

I really like the plain Yoplait, but I wasn’t a fan of this flavored. The blueberry was pre-mixed in, and I didn’t get much blueberry flavor. I definitely like Chobani blueberry more – I like the actual blueberry chunks! But I do love that Yoplait Greek yogurt has more calcium – 35% of your daily value!

Have you tried any of the new Greek yogurts on the market? Thoughts? Favorites?

First off, thank you very much for all your votes and kind comments on my 2 dress options! Very helpful πŸ™‚

Second….Yay overnight oats I’ve missed you!!

IMG 7223-1

That is one orange bowl :-/

Soaked overnight:

  • 1/3 cup oats + 1/3 cup wheat bran 2/3 cup milk
  • Cinnamon & maple syrup
  • Raisins
  • Pumpkin
  • Almond butter

In the morning:

  • 1/2 container of yogurt stirred in
  • Life cereal on top (I love the crunch)

My stomach felt off all yesterday morning and into the early afternoon. So my eats were a bit random.

Snacked on pita chips

IMG 7227

And carrots

IMG 7228

And “lunch” was in 2 parts. Amy’s all-American veggie burger with the necessary condiments.

IMG 7229-1

And then a small cereal bowl an hour or so later.

IMG 7231-1

  • Low fat cottage cheese
  • Nature’s Path multigran flakes
  • Banana

IMG 7232

Oh I guess my tum-tum was feeling okay enough for these guys πŸ˜‰

IMG 7230

There was literally a tornado here a couple days ago (okay, as close to a tornado as California’s going to get), and we spent the morning picking up all the twigs, leaves and branches. Check out her legit gardening gloves! πŸ˜‰

IMG 7226

So cute so cute.

After work I had a job interview. Okay, it was only at Old Navy, but a job is a job folks. And I need one.

Post-interview snackage (x2 – I had already eaten half the apple by this point).

IMG 7233-1

And dinner!! Delicious delicious dinner πŸ˜€

IMG 7220

I had this amazingly delicious butternut squash pasta sauce and knew right away I wanted to make lasagna with it. I used 2 mini pans (meatloaf sized).

Butternut Squash Lasagna

  • Whole wheat lasagna noodles
  • 1 lb ground turkey
  • 1 jar Dave’s Gourmet butternut squash pasta sauce
  • Mushrooms
  • Onion
  • 16 oz cottage cheese (I like it better than ricotta)
  • Italian blend cheese (I like it better than mozzarella)

1. Chop up mushrooms and onions and sautee in olive oil.
2. Cook ground turkey on the stove.
3. I then layered everything pretty randomly. Pasta sauce, cottage cheese, noodle, ground turkey, mushrooms/onions, cheese, pasta sauce…etc. I kind of winged it πŸ˜‰
4. The top layer was lasagna noodle, pasta sauce, and then cheese to top it off.
5. Bake at 375 for 45 minutes with tin foil on. Remove tin foil and cook an additional 15-30 minutes (until hot in the middle).

Sorry it’s not very structural. I would recommend no mushrooms or onions. As much as I really wanted veggies in it, the flavor/textures just didn’t go well with the sauce I didn’t think. This sauce makes the dish. My mom bought it for me at Costco (she called me ASAP when she saw it!) and it’s sooooo good. I can’t wait to open up and use the other jar!

The rest of the night was filled with unpictured eats such as popcorn with Reese’s Pieces (not as good together as my sister tried to convince me it was), and strawberries with chocolate sauce (thank you roommate for the inspiration!). So much sweet. Must. Cut. Down. Oh well πŸ˜‰

**Note: this was written on Thursday night, but my internet was down (what’s new) so was posted on Friday**

Madelin was wonderfully kind enough to award me with the Beautiful Blogger award!

I recently shared the 7 random facts about myself on this post, so check it out if you interested! πŸ˜‰

In other news, I’m sure much of you caught Michael Pollen and Alicia Silverstone on Oprah yesterday. I’ve yet to see Food Inc, but I found the intereview extremely interesting. I have their same viewpoints on eating processed and real foods, but I have to admit I’ve really never given a second thought to my poultry. I try to avoid “fake” and highly processed meats, but I really don’t pay attention to organic, grass-fed, etc. Maybe I should start?

I was, however, impressed by Chipotle! I had no idea they were that fresh and healthy! A Chipotle is finally coming here to my college town, and man, am I excited! πŸ˜‰

Speaking of yesterday, did you know Wednesdays are $1 oatmeal day at Jamba Juice? When I heard that, I knew where I’d be stopping on my drive to work.

IMG 6476

I had a really hard time deciding from all their options.

I finally decided on Banana. Steel cut oats cooked with soymilk, topped with banana slices and brown sugar crumble.

IMG 6475

Oh, brown sugar crumble! Just like the crumbles on top of apple pie πŸ˜€

IMG 6477

Unfortunately, it didn’t hold me over long at all, and I was starving two hours later. Made my mini-lunch earlier than planned.

2 slices WW bread topped with laughing cow cheese + pumpkin butter.

IMG 6479-1

With leftover roasted broccoli.

IMG 6478

And snuck a couple treats from my little girl’s “Yay, you went potty on the toilet” bag of candy.

IMG 6481

Dinner was a broccoli, chicken and cheese mixture that was honestly waaayyy too rich for me.

IMG 6482-1

And I couldn’t think of a better way to reward myself after such an exhausting and emotionally draining day (have you tried dealing with a 2 year old who hasn’t gone #2 in more than a week? Yeah, they’re a bit whiny) than with froyo on the way home from work.

IMG 6484

This beast was huge!! That was a 16 oz container it was overflowing.

See you tomorrow for Flashback to Europe part 3 and Friday!!

Yes, I made it back to school alive, thank you for asking πŸ™‚ Sorry for my random and non-existent posts back home, but when I’m off my normal schedule, my routine just goes out the window. With blogging and eating. I can’t even tell you how much I ate last week, and I’m not talking about Thanksgiving food. When I come home to a FULL cupboard and foods I’m not normally around, I go crazy munching. Add that to the 3+ servings of ice cream, cake, and pies each night…and you get a wee bit bloated Tay-Tay.

So now I’m focusing on getting back into my normal routine and will hopefully feel back to normal by the end of this week!

I will also return to normal blog reading and commenting, I promise πŸ™‚

Breakfast was the last of my frozen pumpkin pancakes topped with plain yogurt, pumpkin butter & syrup.

IMG 6174-1

I was starving by the time I got home for lunch.

Black bean burger topped with leftover cranberry sauce & guacamole. Leftover turkey with BBQ sauce for dipping. And mushrooms mixed with cranberry sauce (sounds random, but was quite delicious).

*Please bear with the camera pictures. Β Update on new camera coming soon*

IMG 0426-1

I mixed up some leftovers for dinner as well. I stir-fryed up some onions with some turkey, tofu, and pumpkin seeds. Towards the end, I added some Annie’s Raspberry vinaigrette for marinating and cranberry sauce.

Served with black beans, quinoa, cauliflower, and more cranberry sauce.

IMG 0429-1

The black beans with the sweet flavor of the stir-fry was delicious!

Dessert was a nibble of this fair trade dark chocolate I received during a presentation in class. However I think it was spiced with curry and I wasn’t a fan.

IMG 0432-1

Since I left my memory card at school last week, a few past eats went unblogged about, I wanted to show off some yummies πŸ˜‰

Last week I stopped at Einstein’s to restock on pumpkin cream cheese, and I had to try the pumpkin cream cheese muffin.

IMG 6180-1

I’m not even a fan of muffins, but this was a-mazing.

IMG 6178-1

Dessert I forgot about on Thanksgiving – pumpkin caramel turtle.

Salted peanuts, caramel, & pumpkin fudge all drizzled with chocolate.

CIMG4614-1

Yummm.

And an itsy bitsy ice cream cone (guess what flavor! πŸ˜‰ ) at the local Avila Valley Barn.

IMG 6182-1

Perfect portion πŸ™‚

And best burrito ever on the drive back yesterday.

Brown rice, chicken breast, lettuce, pico de gallo, sour cream, and the star of the show – mango vinaigrette (which they cook the chicken in).

IMG 5758

It’s also Monday, which means my weekly “Ripples” email (a ripple of quotes). I’ll leave you with the one from this week:

May today there be peace within.
May you trust that you are exactly where you are meant to be.
May you not forget the infinite possibilities that are born of faith in yourself and others.
May you use the gifts that you have received, and pass on the love that has been given to you.
May you be content with yourself just the way you are.
Let this knowledge settle into your bones and allow your soul the freedom to sing, dance, praise and love.
It is there for each and every one of us.

What I got from this was to live in the present. Not the past, not the future. Don’t dwell. Don’t regret. Don’t wait for the day when your life is going to magically become “perfect.” Sure, you can learn from the past, learn from things you’ve regretted, and look forward to the future. But you will never get these current moments back. So live and love!

**Still phone pictures** 😦

My hunger never calmed down last night, and post popcorn included the infamous Banana Whip!!

IMG 0329-1

OMG amaaaaazing. Definitely something only a food processer can do. Although my little food processer is so teeny, that it starts to smoke and gets so hot that it actually heats up the banana whip when it goes too long. So I’m not sure mine’s as light and airy as it’s supposed to be.

IMG 0330-1

And I also got a Halloween package from my grandma Sissie!

IMG 0334

Obviously dug in a bit already πŸ˜‰

IMG 0336-1

This morning was a re-make of something I haven’t had in a while. Waffle ‘Witch! (wow what a festive title, no?)

IMG 0331-1

Sandwiched between 2 Kashi honey oat waffles:

  • Scrambled eggs with some cheese
  • Garlic & herb cream cheese
  • Ketchup
  • Tomato

IMG 0333-1

To fully capture it in it’s glory, I’ll remind you of it when I had an actual photo from a real camera.

IMG 4823-1

IMG 4824-1

Except that one had guac in it, which mine did not 😦

I definitely got a lot accomplished today:

  • Costco
  • Old Navy returns/costum shopping
  • Post office
  • Studying/HW
  • Workout
  • Taking camera pics of my food (or not)

So to make up for my lack of pictures, I promised you something else exciting today, so here it is! My first Vlog!

I know a bunch of bloggers got on the house tour train a while ago, and I’ve been meaning to do it. Now that I don’t have my normal spectacular pictures to wow you all with, I thought it would be the perfect time.

(Please ignore the awkard ending. I didn’t know exactly how to say “bye”. And sorry my finger kept getting in the way of the lens. Also sorry if it’s grainy at parts due to lighting and makes you dizzy. I realized I moved the camera around a bit too much. Β I also like how the beginning shot is of beer. Β Nice πŸ˜‰ )

Enjoy πŸ™‚

You can tell it’s midterms week when there are 75 people on facebook chat.

Very true.

Although I have no midterms this week, I’m still crazy stressed/busy! Hence why this is a quickie.

Operation “Eat out the Cereal”:

IMG 5774

  • Nature’s Path strawberry yogurt
  • Quaker oatmeal squares
  • Almond milk
  • Blob of sunbutter

IMG 5775-1

At the end it’s like you’re drinking strawberry milk! Mmmmm.

With coffee and my new favorite creamer I got at Whole Foods on sale.

IMG 5753

Deeeelicious. I wish I had gotten 2 because it was on sale for only $2, and the carton was only about 3/4 full upon opening!

Gym Sesh:

  • 20 minutes stairmaster level 10-11
  • 30 minutes upper body strength

Knee strap felt wonderful again. I wore it on my walk to the gym and my knee didn’t hurt one bit. Can I pleeeease live in it? πŸ˜‰

Post-gym snackie:

Unpictured raspberries + pumpkin smoothie.

IMG 5777-1

Lunch at work – Kashi mayan bake.

IMG 5779

Love the sweet plaintains!

IMG 5780

And….snackies.

Mini baby cupcake.

IMG 5782-1

Honeycrisp apple slices dipped in pumpkin cream cheese (don’t knock it until you’ve tried it!)

IMG 5786-1

Unpictured late and easy dinner of

  • scrambled eggs +
  • deli turkey +
  • parm cheese +
  • queso dip

Winning combo.

And 2 mugs of hot chocolate while studying.

Okay, I definitely should not have procrastinated the past couple days, but as I can barely keep my eyes open to blog, let alone study…I’m out.

Enjoy your hump-day dear blog friends!

Happy Monday! But really, is there such a thing?

There is if you make it one! πŸ™‚

I had a very “off” day yesterday (if you didn’t notice by my lack of enthusiasm in my post). I think part of the reason was the fact that it was day #4 off of exercise. That combined with excess ice cream eating left me feeling bloated, tired, and run down. I need my endorphins!

Then, last night, I received a weekly quotes email about transforming your “Poopy Days” (yes, they used those exact words). Quoted from the email:

“Use your poopy today as
fertilizer for a better tomorrow.”
-written and submitted by Debbie S., Kohler WI

Very true. I may have had a poopy Sunday, but that just makes me even more excited to have an un-poopy Monday!

What I did today to make it aΒ Marvelous Monday:

1. Started my day with a perfect breakfast.

Pumpkin bagel (which I picked up with the cream cheese yesterday) with pumpkin cream cheese, and pumpkin pie spice PB.

IMG 5647-1

The pumpkin cream cheese wasΒ fantastic. Delicious. I’m in love. And I had to include some PB in breakfast of course. Β I can’t remember the last time I’ve had breakfast without nut butter.

IMG 5648-1

2. Stopped at Starbucks on my way to class. Coffee in a to-go cup always tastes better to me πŸ™‚

IMG 5649

3. I exercised. First time in 4 days! 30 minutes stairmaster level 10-11, 10 minute ab work, and 10 minute strength.

4. Enjoyed pumpkin for lunch as well.

WW english muffin pizza – half with pizza sauce, ricotta and cheese.

IMG 5656

Half as a “dessert” pizza – pumpkin & ricotta mixture topped with apple slices and cinnamon.

IMG 5655

Delicious πŸ˜€

IMG 5657

Also ate the rest of the apple and honeydew with a bit of 2% greek yogurt while this was cooking.

IMG 5653

5. Enjoyed treats throughout the day.

Delicious fudgy brownie.

IMG 5636-1

(Same pic as yesterday – but looked and tasted the same anyways)

Coconut vanilla toffee that my teacher brought back from Thailand. Um…YUM.

IMG 0265

As my roommate commented about these toffees “I stuck it in my mouth and didn’t expect it to be so big and hard!” Wow. That’sΒ definitely what she said.

And 2 of these See’s candies I picked up the other day.

Apple pie truffle & PB patty. Β (I didn’t eat the lower right honey almond one – yucko)

IMG 5622-1

Speaking of See’s candies..have you entered myΒ giveaway yet?

6. Skipped my 12-2:00 class and took a nap instead.

IMG 5661-1

Talk about posing.

7. Spent a fun hour dreaming up a Halloween party with my roommates (I think one’s in the works. Wahoo!)

8. Finished my night off with a whipped pumpkin apple pie a la mode creation.

Cottage cheese + pumpkin + cinnamon. Topped with cinnamon micro’d apple, vanilla granola, and a bit of vanilla froyo.

IMG 0268-1

(Camera was dying as I took a bad picture – so this was taken via Iphone)

I was so very excited to hit up the gym today. But not so excited about my knee. I did, however, break down and orderknee sleeves last night! The physical therapist said that knee sleeves would do nothing to help my condition, but honestly,Β nothing has helped so I thought “Why not?!” I’ve heard such rave reviews I decided I had to try them out myself. I can’t wait for it to come in the mail.

Q&A Time!

A bunch of other bloggers have “Q & A pages” or “Q&A posts” so I think I’m going to jump on the bandwagon, if you don’t mind. So nowΒ I’m askingΒ you to askΒ me Do you have any questions for me? About my life? About the world? About school? About anything? Curious lingering thoughts? Something you’ve always wanted to know? Well now’s your chance to find out! (yes – I sound like an infomercial here).Β Ask away! (You can post a comment or email me questions)
