I obviously love my sweets, and am all for enjoying them! But it’s quite unfortunate when your pants are too tight. And my stomach has been hurting every morning (I often times have stomach problems, and I’m not sure what exactly this is due to. But I’m going to try and eliminate late night eating and ice cream right before bed to see if it’s possibly related).

First step – I’m going to try and go through just 1 day without any sweets. I literally haven’t done this in who-knows-how-long, but it’s my challenge for the day!

Even though I do have my new job at Old Navy, and jeans are more afforadable now, I don’t want to have to buy larger sized jeans! πŸ˜‰

In other news, I managed to snag my roommates near empty jar of nut butter as she was throwing it away. NO! Trash to her, valuables to me πŸ˜‰

  • 1/3 cup oats + 1/4 cup wheat bran + 1 cup almond milk
  • Cinnamon & maple syrup
  • 1 egg
  • 2 spoonfuls yogurt stirred in at end
  • More nut butter and whipped cream cheese on top
  • Sprinkling of granola (post-picture)

I tried the blueberry Yoplait Greek yogurt!

I really like the plain Yoplait, but I wasn’t a fan of this flavored. The blueberry was pre-mixed in, and I didn’t get much blueberry flavor. I definitely like Chobani blueberry more – I like the actual blueberry chunks! But I do love that Yoplait Greek yogurt has more calcium – 35% of your daily value!

Second….Yay overnight oats I’ve missed you!!

Soaked overnight:

  • 1/3 cup oats + 1/3 cup wheat bran 2/3 cup milk
  • Cinnamon & maple syrup
  • Raisins
  • Pumpkin
  • Almond butter

In the morning:

  • 1/2 container of yogurt stirred in
  • Life cereal on top (I love the crunch)

My stomach felt off all yesterday morning and into the early afternoon. So my eats were a bit random.

There was literally a tornado here a couple days ago (okay, as close to a tornado as California’s going to get), and we spent the morning picking up all the twigs, leaves and branches. Check out her legit gardening gloves! πŸ˜‰

After work I had a job interview. Okay, it was only at Old Navy, but a job is a job folks. And I need one.

Post-interview snackage (x2 – I had already eaten half the apple by this point).

I had this amazingly delicious butternut squash pasta sauce and knew right away I wanted to make lasagna with it. I used 2 mini pans (meatloaf sized).

Butternut Squash Lasagna

  • Whole wheat lasagna noodles
  • 1 lb ground turkey
  • 1 jar Dave’s Gourmet butternut squash pasta sauce
  • Mushrooms
  • Onion
  • 16 oz cottage cheese (I like it better than ricotta)
  • Italian blend cheese (I like it better than mozzarella)

1. Chop up mushrooms and onions and sautee in olive oil.
2. Cook ground turkey on the stove.
3. I then layered everything pretty randomly. Pasta sauce, cottage cheese, noodle, ground turkey, mushrooms/onions, cheese, pasta sauce…etc. I kind of winged it πŸ˜‰
4. The top layer was lasagna noodle, pasta sauce, and then cheese to top it off.
5. Bake at 375 for 45 minutes with tin foil on. Remove tin foil and cook an additional 15-30 minutes (until hot in the middle).

Sorry it’s not very structural. I would recommend no mushrooms or onions. As much as I really wanted veggies in it, the flavor/textures just didn’t go well with the sauce I didn’t think. This sauce makes the dish. My mom bought it for me at Costco (she called me ASAP when she saw it!) and it’s sooooo good. I can’t wait to open up and use the other jar!

The rest of the night was filled with unpictured eats such as popcorn with Reese’s Pieces (not as good together as my sister tried to convince me it was), and strawberries with chocolate sauce (thank you roommate for the inspiration!). So much sweet. Must. Cut. Down. Oh well πŸ˜‰

In other news, I’m sure much of you caught Michael Pollen and Alicia Silverstone on Oprah yesterday. I’ve yet to see Food Inc, but I found the intereview extremely interesting. I have their same viewpoints on eating processed and real foods, but I have to admit I’ve really never given a second thought to my poultry. I try to avoid “fake” and highly processed meats, but I really don’t pay attention to organic, grass-fed, etc. Maybe I should start?

I was, however, impressed by Chipotle! I had no idea they were that fresh and healthy! A Chipotle is finally coming here to my college town, and man, am I excited! πŸ˜‰

Speaking of yesterday, did you know Wednesdays are $1 oatmeal day at Jamba Juice? When I heard that, I knew where I’d be stopping on my drive to work.

I had a really hard time deciding from all their options.

I finally decided on Banana. Steel cut oats cooked with soymilk, topped with banana slices and brown sugar crumble.

Unfortunately, it didn’t hold me over long at all, and I was starving two hours later. Made my mini-lunch earlier than planned.

2 slices WW bread topped with laughing cow cheese + pumpkin butter.

Dinner was a broccoli, chicken and cheese mixture that was honestly waaayyy too rich for me.

And I couldn’t think of a better way to reward myself after such an exhausting and emotionally draining day (have you tried dealing with a 2 year old who hasn’t gone #2 in more than a week? Yeah, they’re a bit whiny) than with froyo on the way home from work.

Yes, I made it back to school alive, thank you for asking πŸ™‚ Sorry for my random and non-existent posts back home, but when I’m off my normal schedule, my routine just goes out the window. With blogging and eating. I can’t even tell you how much I ate last week, and I’m not talking about Thanksgiving food. When I come home to a FULL cupboard and foods I’m not normally around, I go crazy munching. Add that to the 3+ servings of ice cream, cake, and pies each night…and you get a wee bit bloated Tay-Tay.

So now I’m focusing on getting back into my normal routine and will hopefully feel back to normal by the end of this week!

I will also return to normal blog reading and commenting, I promise πŸ™‚

Breakfast was the last of my frozen pumpkin pancakes topped with plain yogurt, pumpkin butter & syrup.

I was starving by the time I got home for lunch.

Black bean burger topped with leftover cranberry sauce & guacamole. Leftover turkey with BBQ sauce for dipping. And mushrooms mixed with cranberry sauce (sounds random, but was quite delicious).

I mixed up some leftovers for dinner as well. I stir-fryed up some onions with some turkey, tofu, and pumpkin seeds. Towards the end, I added some Annie’s Raspberry vinaigrette for marinating and cranberry sauce.

Served with black beans, quinoa, cauliflower, and more cranberry sauce.

Dessert was a nibble of this fair trade dark chocolate I received during a presentation in class. However I think it was spiced with curry and I wasn’t a fan.

Since I left my memory card at school last week, a few past eats went unblogged about, I wanted to show off some yummies πŸ˜‰

Last week I stopped at Einstein’s to restock on pumpkin cream cheese, and I had to try the pumpkin cream cheese muffin.

Brown rice, chicken breast, lettuce, pico de gallo, sour cream, and the star of the show – mango vinaigrette (which they cook the chicken in).

Don’t wait for the day when your life is going to magically become “perfect.” Sure, you can learn from the past, learn from things you’ve regretted, and look forward to the future. But you will never get these current moments back. So live and love!

My hunger never calmed down last night, and post popcorn included the infamous Banana Whip!!

OMG amaaaaazing. Definitely something only a food processer can do. Although my little food processer is so teeny, that it starts to smoke and gets so hot that it actually heats up the banana whip when it goes too long. So I’m not sure mine’s as light and airy as it’s supposed to be.

Very true.

Although I have no midterms this week, I’m still crazy stressed/busy! Hence why this is a quickie.

  • 30 minutes upper body strength

Knee strap felt wonderful again. I wore it on my walk to the gym and my knee didn’t hurt one bit. Can I pleeeease live in it? πŸ˜‰

Happy Monday! But really, is there such a thing?

There is if you make it one! πŸ™‚

I had a very “off” day yesterday (if you didn’t notice by my lack of enthusiasm in my post). I think part of the reason was the fact that it was day #4 off of exercise. That combined with excess ice cream eating left me feeling bloated, tired, and run down. I need my endorphins!

Then, last night, I received a weekly quotes email about transforming your “Poopy Days” (yes, they used those exact words). Quoted from the email:

Very true. I may have had a poopy Sunday, but that just makes me even more excited to have an un-poopy Monday!

What I did today to make it aΒ Marvelous Monday:

1. Started my day with a perfect breakfast.

Pumpkin bagel (which I picked up with the cream cheese yesterday) with pumpkin cream cheese, and pumpkin pie spice PB.

The pumpkin cream cheese wasΒ fantastic. Delicious. I’m in love. And I had to include some PB in breakfast of course. Β I can’t remember the last time I’ve had breakfast without nut butter.

2. Stopped at Starbucks on my way to class. Coffee in a to-go cup always tastes better to me πŸ™‚

3. I exercised. First time in 4 days! 30 minutes stairmaster level 10-11, 10 minute ab work, and 10 minute strength.

4. Enjoyed pumpkin for lunch as well.

WW english muffin pizza – half with pizza sauce, ricotta and cheese.

8. Finished my night off with a whipped pumpkin apple pie a la mode creation.

Cottage cheese + pumpkin + cinnamon. Topped with cinnamon micro’d apple, vanilla granola, and a bit of vanilla froyo.

I was so very excited to hit up the gym today. But not so excited about my knee. I did, however, break down and orderknee sleeves last night! The physical therapist said that knee sleeves would do nothing to help my condition, but honestly,Β nothing has helped so I thought “Why not?!” I’ve heard such rave reviews I decided I had to try them out myself. I can’t wait for it to come in the mail.

TJ’s – you failed me this AM. I went through 4 Trader Joe’s peaches this morning for my breakfast.

The first 3 were rotten, and the last 1 was still bland and mushy.

Pretty sure I’ll be taking my receipt back to them – $3 for one mushy peach? No thank you.

Honestly, the Trader Joe’s 2% yogurt tasted hardly any different than the 0%. They’re both creamy and sour. Maybe in other brands it makes a difference?

I’m really tired and overwhelmed right now with work, so I’m just going to quickly go through my afternoon eats.

In other news, I was in shock when I realized so many of you had yet to try See’s Candy. Maybe I was just raised on it, but it was always a tradition to get a sucker and a sample everytime we went to the mall. It seems that it’s mostly a west coast chain? Bad news: I scarfed down my breakfast, and didn’t have time to snap a photogenic picture.

Good news: It was the exact same breakfast as yesterday, so allow me to refresh your memory.

Oh hey look maybe I really am starting a ritual of Waffle Overnight Oat Wednesdays!

Then it was class, gym, class, (canceled – wooooot wooooot), class, work.

I was mad starving after my gym workout, which I’ll share with you wonderful folks.

  • 20 minutes upper body strength machines:
    • 2 sets 15 reps tricep machine (please don’t ask me the name)
    • 2 sets 10 reps bicep machine (same deal)
    • 2 sets 15 reps chest press
    • 3 sets 12 reps pull down machine (again – I’m not technical here)
    • 2 sets 12 reps tricep pull down
  • 10 minute mat work:
    • 2 sets 15 reps bicep curls
    • 2 sets 15 reps tricep extensions
    • 1 set 15 reps bicep curl to shoulder press
    • 15 push-ups
  • 30 minute treadmill
    • .2 mile warmup walk
    • 1 mile 6.0 mph
    • .2 mile walk break
    • 1 mile 6.0 mph
    • .3 mile cooldown walk

I wanted to take it easy today for me knee (it’s really been bothering me more this past week), and even that easy workout used up the whole 30 minute cardio machine limit. That’s crazy! You can barely get a 3 mile run in during that time, not including warm-up & cooldown.

Post-gym during the 15 minutes I had before class, I scarfed down this puppy.

ReallyΒ good, but it might be because I was hangry hangry! Either way, I love their burritos/wraps! The bean & cheese is my favorite, and TJ’s even has their own version – the 98% FF bean & cheese burrito. Yes, I swear that’s what it’s called. At least I’m pretty sure.

I then hit the road to walk to my car. So far this week, I’ve either walked one way to school, or parked my car halfway and walked. Parking halfway is almost as fast as the bus, and I get in some extra walking! I used to walk multiple times per day when I lived closer, and I miss it. I hope to keep this up. At least until it rains.

On my way to work, I stopped by the AT&T store to exchange my phone. The lighting’s been messed up, and not lighting up everytime. And since it’s still within the 30 day exchange period, I don’t want to take any chances. The worker was extremely rude to me, telling me I have to do all exchanges at the Apple store. That was frustrating, since I went into work late specifically to stop at the AT&T store. Bad customer service really irritates me. At least tell me nicely!

Since See’s candies was right next door, I popped in there to pick up some Pumpkin spice lollipops! Last year I tried one, and when I went back to buy some more, they were all sold out! I mean every store and online were sold out. Β Literally. Β Gone. Β  Completely out of stock. So I made sure to get some earlier this year πŸ˜‰

Milk chocolate buttercream. Super rich though. And I’m more a fan of the mocha or butterchew flavors – so I only had half. Β What’s your favorite See’s candy? Mine is definitely the Butterscotch square or the Mocha. Β Mmm.

Also wolfed down a Double Chocolate dreams vitatop with extra PB on the drive.

Hmmm…it was better than it looks. I swear.

Dinner, however, was not was as tasty as it looked.

Grilled zucchini, BBQ tofu, spinach & ricotta on grilled whole wheat. Okra fries with ketchup. And extra grilled zucchini.

The sandwich was really bland – I think that bread was old. So towards the end, I just ate the insides of the sammy.

Mmm that looks like avocado. But it’s really zucchini. That poser.

While the foreman was on and sexy hot, I threw some figgies on there as well. Topped with some ricotta cheese + maple syrup + cinnamon mixture.

Mmm – thought I’d be way full eating my dessert 5 minutes after dinner, but surprisingly not.

I also snagged a couple peanut M&M’s. Sorry figs. You were a great dessert, but you were no chocolate.

Okay – off to do lab work I procrastinated on all week.

It’s a crime…to go so long without micro-ing my oats. Seriously – saved me a nasty stuck on pot to scrub. And much faster.

  • 1/3 Coach’s steel cut oats
  • 1/3 cup water + 1/3 cup almond milk
  • Cinnamon
  • 1/2 sliced ‘naner
  • 1/4 cup Nature’s path vanilla granola
  • Handful of Banana Nut Cheerios
  • Earth Balance peanut butter

And a scoop of Sunbutter on my spoon for good measure.

It’s a crime…to spend more than the 30 minute time-limit on the treadmill. But no one was waiting.

  • 2.5 miles running
  • .25 walk
  • 1 mile run

Total: 3.5 running; 4.5 with warm-up & cool-down walking

Not bad, not bad. Also used the foam roller for the first time today on my outer thigh. Not sure if that’s helping my knee issue though.

…to call this a pizza, but pizza is what I tried to createΒ with all my free time in my 10 minute rush before work.
