I’m getting so bored of weights weights weights at the gym, plus I wanted to SWEAT.  It actually worked out okay with my boot!  Of course I had to modify it, and not do the kicking segments as fast, but I’ll definitely be doing this again Smile I actually love Tae Bo and used it all the time when I lost weight a long time ago in high school, and then again when I was losing weight (before I started running) freshman year.  If you do it right your upper body is SORE. 

And then I whipped out the old school 8-minute abs.  Although next time I’ll be blasting my own music in the background.  There’s only so much “C’mon gang!!” I can take.

Yay I actually felt like I got a workout in!!

This was my first Easter completely alone.  In the past I’ve always either gone home, or done some sort of celebration with my roommates.  So of course I had to keep up some sort of tradition Smile

I hope you all are having a fabulous weekend. It’s been a beautiful weekend over here…and no finals to study for! 😀

I started off Saturday morning with some PB mocha oats.

  • 1/3 cup oats + 1/4 cup oat bran + 1 cup almond milk
  • 2 egg whites
  • Scoop of instant coffee
  • Chocolate PB2
  • Justin’s honey PB
  • Cream cheese
  • Granola

So delicious. But now I’m out of instant coffee powder 😦

I then did a little mini-workout here at home consisting of tae bo upper body punches! I used to do Billy Blanks tae bo DVDs all the time when I was first starting to lose weight. And even after I lost all my weight, I occasionally did them. If you contract your muscles and punch with strength, it really works and makes you sore!

I did 2 sets of each of the following (30 seconds each):

  • Front punches
  • Front upper cuts
  • Side jab with a cross-over punch (with the other arm) – each side
  • Side jabs (30 seconds each side)
  • Side upper cut (each side)
  • Side jabs alternating punching high and low (with squats) – each side

Total: 10 minutes

  • 7 minutes ab work
  • 50 reps of clams on each side (hip exercise)
  • Stretch

I eventually hit the road to run some errands, without even thinking of grabbing a snack. So unlike me! It had been 4 hours since breakfast and I was starting to get hungry, so I knew I needed something.

Enter Jamba Juice. Mangos, peaches, OJ, and ‘lower calorie dairy base’.

Until my afternoon snack before dinner of carrots and dip. Look – I remembered to photograph it! Obvious why I never remember – it’s not very entrancing 😉

The dip just consisted of a mixture of raspberry dressing, feta dressing & BBQ sauce. Weird? Maybe. But delicious. And homemade iced coffee.

Dinner was uninteresting so let’s just move on shall we?

I woke up this morning extremely sore!  Especially in my back.  Replenished the muscles with oatmeal again. This time in a jar!

  • 1/3 cup oats + 1/4 cup oat bran + 1 cup almond milk
  • 2 egg whites
  • Cocoa powder & chocolate PB2 powder
  • Extra spoonful of honey PB for good measure 😉

This was the end of the last of my sunflower seed butter jars. Thank you so much to Sunbutter for sending me so many delicious varieties to try out. I loved them all – sunflower seed butter is some tasty stuff 🙂 Just like spreading melted sunflower seeds onto your toast or oatmeal!

I then hit up the Cal Poly baseball game. Go Mustangs!! We didn’t win 😦 But it was a good game. I grew up surrounded by baseball and I miss it! My brother has played in extremely competitive leagues since he was younger and now plays for U Penn (although I wish he played here.  How fun would that be to go see him play?!). Baseball is definitely a comfort thing as well.

It was okay. Sticky and very sweet – it reminded me of a Fiber One bar. Okay so it was quite tasty actually. Yet low in the fiber category – only 2 grams.

Dinner tonight was kind of lame.

I tried out a pre-packaged meal of roasted red pepper and chicken alfredo pasta. It was nasty. Bland and processed tasting. I literally had 3 or 4 bites before I tossed it.

My salad was good! I sauteed asparagus in

  • Sesame oil
  • Rice vinegar
  • Garlic
  • Soy sauce

Then ate it over mixed greens with Trader Joe’s raspberry vinaigrette. I also tossed in some nutritional yeast, and once combined with the warm asparagus, it melted into a creamy consistency. Yum!

And had some leftover kabocha squash.

Since it was a ‘heavy on the veggies, light on the other foods’ type of dinner, I went back for a handful of pistachios

And an apple with almond butter later in the night. Plus hot cocoa of course.

About 3-4x the amount of shown almond butter was consumed. I finally bought this one at TJs a couple weeks ago.

HOLY YUM!!! It has a very unique and crunchy taste (I’m guessing due to the flaxseeds). Almond butter has such great stats – I had no idea it had such a good amount of calcium in it!

We actually ended up going out both nights (that is a lot for me!) since it was our friend’s birthday on Saturday night (where the 2 pieces of cake and about 6 cookies came in to play). But it was fun 🙂 And exhausting!

Breakfast this morning was a delicious cereal bowl! Filled with

  • Strained yogurt
  • Kashi U cereal
  • Almond butter
  • And the ripest honeydew ever!

My mommy would be so proud – I picked a good honeydew 😉 She taught me to feel for the “tackiest” non-smooth surface you can find.  It works!

I then completed

  • 20 minutes upper body weights
  • 5 minutes abs
  • 15 minutes hip exercises

The physical therapist gave me 4 hip exercises to do to strengthen my hips. We started off with easier versions, but progressed to these basic exercises: (ignore my pictures in real clothes – I don’t normally workout in a sweater 😉 haha)

1. One-legged squat (3x 20 reps each side)

As you sink into a one-legged squat, reach forward with your other foot, as if you were about to step forward.

As you rise back, bring your foot all the way up.

And squat again as you reach your leg to the back.

Make sure to focus on:

  • Keeping your hips/waistband of your shorts in a straight line – do not let your opposite hip drop
  • Keeping your squatting knee in line with you 2nd toe – do not let it roll inward.

2. Power clam – 3x 20 reps on each side. Work up to 2 minutes straight on each side.

Start on your side on your elbow, hips up, knees closed together.

Lift your top leg up into an open “clam” position, with ankles still touching, then kick your leg backwards.

Return to “clam” position, and lower knee back down.

3. Plank leg lift – 3x 10 reps on each side

Start in plank position. Tighten the butt and lift left leg. Lower and repeat with right leg.

4. Hamstring curl – 3x 20 reps each side

Start with one leg lifted backwards, foot twisted so you’re pointing your heel out.

This one is just to give my hamstring a little work.

So there you have my strength exercises! They are tough and my hips are always shaky/weak after the power clam!

I’ve also been instructed to foam roll my hamstring, IT band, and quads. However I wasn’t instructed on how long to foam roll for. Any experienced foam rollers have reccomendations?

Lunch at school was a turkey wrap (rolled up of course) & carrots.

F-F-F-flashback Friday time!!!

But first, how was everyone’s Friday?

Mine started out with sleeping in – *sigh* how nice 🙂

And a nice yogurt bowl of yogurt + pumpkin, banana bomb muffin, sunbutter, pumpkin butter & a bit of cereal for crunch. Oh and banana slices! Banana slices make the yogurt mix 😉

I then proceeded to fail my quiz (meh – I’ll drop this one), and hit up the gym where my usual stairmaster was occupied. So I chose the stairmill (the revolving staircase)

This thing works your thighs and butt way more than the stairmaster.

I don’t get as out of breath on the stairmill, but man, my legs were weak and shaky! It does hurt my knee more, which is why I stick to the master.

  • 30 minutes “fat burning intervals” level 12
  • 15 minutes whittling my middle

I completely chowed down my dinner without even thinking about it. Straight from the tuppaware container too!

But it was leftovers from my stir-fry this night which included

  • Tofu
  • Turkey
  • Cranberry sauce
  • pumpkin seeds
  • quinoa

Delicious.

Holiday season has always been a huge deal in my house. My mom is incredibly in love with Christmas, and it’s worn off on all of us! For the next few week’s worth of flashbacks, I thought I’d share some holiday photos and traditions with you all!

1. Gingerbread house making. It’s an all day ordeal! We make the gingerbread in advance, and then go crazy with candy and decorating! I remember my mom making them when I was young, and I just couldn’t wait until I was “old enough” to make a real one myself.

We all know it’s the first day of December! I was going to start out by singing the “Twelve Days of Christmas”, but I’m pretty sure the 12 days are the days directly prior to Christmas, correct? Or the days after Christmas?

While at home this past week, I got to head to Whole Foods and stock up on some Voskos greek yogurt! I haven’t been able to find a large selection here at school, so I was excited to try out more of this brand.

Breakfast included almost this whole container, Kashi Heart to Heart, Banana bomb muffin with sunbutter, and some pumpkin butter.

This yogurt was pretty good, but right away I noticed it was much more watery than other brands. I noticed that with the honey flavor as well, althought I still loved the honey.

This fueled my gym sesh of 3.75 miles on the dreadmill and 10-minute whittle my middle plank style:

  • 3 minute front plank (on elbows)
  • 2 x 15 reps of twisting side planks straight arms (1 on each side)
  • 2 x 1-minute side planks (on elbows, 1 on each side)
  • 2 x 90 second straight arm blanks on bosu ball (1 slight rolling from side to side)
  • 2 minute front plank

Phew!

On Tuesdays, I park my car in a parking lot (conveniently located next to the froyo shop)and walk to campus. Today I was hungry, and massively craving froyo afterwards. No matter what I eat beforehand, I’m always starving after workouts, and crave sweets.

I gave in today.

Planned to get a teensy amount, but once I saw that they had cake batter flavor, all good intentions went out the window. Also picture some pre-photo eaten cookie dough on top.

Needless to say, this killed my appetite for lunch, and I ended up snacking all afternoon.

Coffee to warm my bones + some necessary reading they had at work.

Dinner was eaten in the car on the drive after work since I got off a bit early. But too hungry to wait for home. So sorry for the bad car lighting.

Sunday’s burrito was buy one, get a kids meal free. So I edited a kids burrito to my liking 😉 Chicken, brown rice, black beans, lettuce, pico de gallo in a WW tortilla.

I’m also so glad that I got tons not one second of studying done today. Instead I had the Victoria’s Secret fashion show on in the background and occasionally looked up to gape at their thighs smaller than my arm, or the fact that Heidi Klum thinks she still needs to lose 25 pounds. Really?

Camera update: For those of you who hadn’t heard, my poor camera is no more. I scoured the Black Friday ads for good camera deals, and saw a few, but nothing really stood out to me. The camera I decided I wanted wasn’t much cheaper at Fry’s than on Amazon, and with Amazon I save tax money. So I think I’ll be ordering one soon, or perhaps waiting until Christmas? Which I rrrreally don’t want to do. I don’t think I can last another 4 weeks!

How was everyone’s Thursday?

My vegan morning started out with my usual oats with a few substitutions and additions.

I omitted the egg, but added a scoop of flaxseed and chia seeds. Both can be used as egg replacers if prepared correctly, but I just added them right into the cooking oats on the stove. I always use almond milk in my oats and coffee anyways, so that was simple enough!

Topped with sunbutter, granola, crumbled vegan muffin I had in the freezer, and Quaker oatmeal squares.

Then my larabar tricked me again! I thought I grabbed a PB&J this morning, but it turned out to be cherry pie. I ate 1/2 pre-gym and 1/2 post-gym.

Run total: 3.5 miles TM

10 minutes whittle my middle. I completed a 3 minute plank today (on my elbows – I find elbow planks harder than staright arms). That’s the longest I’ve ever gone 😀 I’ve been doing 90 second planks, but today decided to go for 2 minutes. By the time I looked at my timer it was 2:20, so I thought “go for it!”

Decaf Americano + 1 pump peppermint syrup with soymilk while waiting for a meeting on campus. (I almost put half & half in, but caught myself just in time!)

Vegan lunch was kind of random. Unfortunately, I didn’t have too much to work with today since I’m trying to dwindle my food stash down in preparation of leaving town next week.

Cocoa chia pudding topped with agave, sunbutter & bananas.

And french fries (just sliced potato tossed with olive oil, garlic salt & pepper then baked at 400 degrees for 20 minutes).

However it didn’t hold me long at all, and I was starving for dinner around 5:00. I had an apple to hold me over while I ran to the store to pick up a butternut squash (on sale this week!!). And I couldn’t resist the day-old Vegan berry strusel muffin. It was a sign! Although delicious sounding, it was actually very dry and bland tasting.

(I guess my camera liked the muffin because she ate the pictures)

Dinner was another stuffed butternut squash. This time stuffed with a quinoa mix of:

  • Quinoa
  • Sauteed cinnamon apples & onions with brown sugar
  • Applesauce
  • Cinnamon

I also topped it off more sunbutter (I think I’ve had 5 servings of sunbutter today).

All followed up by a mug of hot cocoa. Made with almond milk, real cocoa powder(vegan!), and stevia.

Thoughts on Vegan for a Day:

While I completely understand and respect everyone who follows a vegan lifestyle, I highly doubt I will ever decide to follow one myself. I’m sure it would be much easier if I actually converted to the lifestyle, and it was my permanent diet everyday, rather than trying to pay attention to it just for one day. Since I’m not used to eating this way, I had to check every label, and even thought of the fact that my gum might not be vegan!

Anyone else who particiated have any thoughts or opinions?

Sorry for no post last night. Life gets busy, but I need to find someway to keep my blog friends in my life 🙂

I receive a weekly email from a speaker who once spoke at my school with a weekly quote or life lesson. This week’s quote stuck with me.

“Think of what you are and
all the fantastic potential of you.”

Next time you have “fat talk” or think down upon yourself, think of your positives. Think of those in your life that appreciate you for who you are on the inside. Think of all the good that you do on a daily basis, and the amount of lives that you touch.

Along those same lines, Amanda Beard, the U.S. Olympian swimmer, came to speak at my school tonight. Having been a big swimmer in the past, I was extremely excited to hear her speak. Especially since she was speaking on the issue of eating disorders. It was extremely moving and insightful. A couple points she made that really stuck out to me included:

  • “I’m 20 pounds more than I was at my competitive weight. And that’s okay with me. That’s what’s great – is that I’m happy how I am now. I may have a little tummy, or a bigger butt, but I hold my son and none of that matters. I say ‘Look at my son! Look at what I made!'”
  • She also mentioned how she looks back on her eating disorder days with such regret – that she spent so much time worrying about how skinny she was and how focused she was with her appearance, that she let her competitive swimming slip to the side. She didn’t enjoy her life. And what’s the point of life, if not to be enjoyed?

I’m glad I got the opportunity to see her speak 🙂

Instead of boring you to tears with a play-by-play of my Monday and Tuesday, I’ll just leave you with a photos of the meals.

Breakfasts have consisted of

I made Angela’s banana bomb muffins the other night again. They are truly one of my favorites. My roommates seem to love them also since 3 were missing in the morning! 😉

Both lunches have been delicious pumpkin soup found at Cost Plus. It made a huge batch on Sunday night, so I’ve enjoyed it 3 days in a row now 🙂

Topped with avocado slices, parmesan cheese, & Mary’s Crackers.

The original recipe called for heavy whipping cream but I subbed in plain yogurt. I also added a can of pumpkin for good measure 😉 And it came out delicious.

To go alongside my soup, I made something that Meghann seemed to popularize around blogworld.

They turned out a little to dry for my taste, but I might have over cooked them since I made individual sized ones in a muffin tin. Either way, my roommates also enjoyed these as well 😉

For today’s lunch, I enjoyed the other half to my butternut squash as a side to my soup.

And a quinoa dish with a mix of nuts & craisins. Topped with a pumpkin sauce I whipped up the other night. Sidenote: I originally cooked up 2 servings of quinoa, thinking I could save some for later. But quinoa portions are teensy! I can’t believe the small amount that is 2 servings! Needless to say, I ate it all tonight 😉

I originally made the sauce to go along with pumpkin pasta  this weekend.  I started to follow a recipe, and then kind of just winged it. I combined on the stove:

  • ~1/2 cup FF sour cream
  • ~1/2 cup pumpkin
  • Cinnamon, nutmeg, & salt
  • Chicken broth
  • Garlic

Actually pretty tasty!

In exercise news, I gave my knee a rest yesterday (after the hike) to do 30 minutes upper body strength + 10 minutes of whittle my middle challenge.
Today, I got in a 4 mile TM run + 5 minute whittle my middle moves consiting of:

  • 1 minute scissors
  • 2 x 1 minute side planks with under body arm twist (1 on each side)
  • 2 minute front plank

Well it’s late, I’m tired, and I have to be up in a little over 6 hours. So good night all!
