We all know it’s the first day of December! I was going to start out by singing the “Twelve Days of Christmas”, but I’m pretty sure the 12 days are the days directly prior to Christmas, correct? Or the days after Christmas?

While at home this past week, I got to head to Whole Foods and stock up on some Voskos greek yogurt! I haven’t been able to find a large selection here at school, so I was excited to try out more of this brand.

Breakfast included almost this whole container, Kashi Heart to Heart, Banana bomb muffin with sunbutter, and some pumpkin butter.

This yogurt was pretty good, but right away I noticed it was much more watery than other brands. I noticed that with the honey flavor as well, althought I still loved the honey.

This fueled my gym sesh of 3.75 miles on the dreadmill and 10-minute whittle my middle plank style:

  • 3 minute front plank (on elbows)
  • 2 x 15 reps of twisting side planks straight arms (1 on each side)
  • 2 x 1-minute side planks (on elbows, 1 on each side)
  • 2 x 90 second straight arm blanks on bosu ball (1 slight rolling from side to side)
  • 2 minute front plank

Phew!

On Tuesdays, I park my car in a parking lot (conveniently located next to the froyo shop)and walk to campus. Today I was hungry, and massively craving froyo afterwards. No matter what I eat beforehand, I’m always starving after workouts, and crave sweets.

I gave in today.

Planned to get a teensy amount, but once I saw that they had cake batter flavor, all good intentions went out the window. Also picture some pre-photo eaten cookie dough on top.

Needless to say, this killed my appetite for lunch, and I ended up snacking all afternoon.

Dinner was eaten in the car on the drive after work since I got off a bit early. But too hungry to wait for home. So sorry for the bad car lighting.

Sunday’s burrito was buy one, get a kids meal free. So I edited a kids burrito to my liking 😉 Chicken, brown rice, black beans, lettuce, pico de gallo in a WW tortilla.

I’m also so glad that I got tons not one second of studying done today. Instead I had the Victoria’s Secret fashion show on in the background and occasionally looked up to gape at their thighs smaller than my arm, or the fact that Heidi Klum thinks she still needs to lose 25 pounds. Really?

Camera update: For those of you who hadn’t heard, my poor camera is no more. I scoured the Black Friday ads for good camera deals, and saw a few, but nothing really stood out to me. The camera I decided I wanted wasn’t much cheaper at Fry’s than on Amazon, and with Amazon I save tax money. So I think I’ll be ordering one soon, or perhaps waiting until Christmas? Which I rrrreally don’t want to do. I don’t think I can last another 4 weeks!

Yes, I made it back to school alive, thank you for asking 🙂 Sorry for my random and non-existent posts back home, but when I’m off my normal schedule, my routine just goes out the window. With blogging and eating. I can’t even tell you how much I ate last week, and I’m not talking about Thanksgiving food. When I come home to a FULL cupboard and foods I’m not normally around, I go crazy munching. Add that to the 3+ servings of ice cream, cake, and pies each night…and you get a wee bit bloated Tay-Tay.

So now I’m focusing on getting back into my normal routine and will hopefully feel back to normal by the end of this week!

I will also return to normal blog reading and commenting, I promise 🙂

Breakfast was the last of my frozen pumpkin pancakes topped with plain yogurt, pumpkin butter & syrup.

I was starving by the time I got home for lunch.

Black bean burger topped with leftover cranberry sauce & guacamole. Leftover turkey with BBQ sauce for dipping. And mushrooms mixed with cranberry sauce (sounds random, but was quite delicious).

I mixed up some leftovers for dinner as well. I stir-fryed up some onions with some turkey, tofu, and pumpkin seeds. Towards the end, I added some Annie’s Raspberry vinaigrette for marinating and cranberry sauce.

Served with black beans, quinoa, cauliflower, and more cranberry sauce.

Dessert was a nibble of this fair trade dark chocolate I received during a presentation in class. However I think it was spiced with curry and I wasn’t a fan.

Since I left my memory card at school last week, a few past eats went unblogged about, I wanted to show off some yummies 😉

Last week I stopped at Einstein’s to restock on pumpkin cream cheese, and I had to try the pumpkin cream cheese muffin.

But you will never get these current moments back. So live and love!

I’m in love

Hello hello. I am back in SLO town (acroynym for the town I live in), exhausted, and now completely stressed! I never get any type of schoolwork or studying done while at home, so it’s pretty jammed for the next 2 weeks.

I didn’t hit the road until late last night (after a Whole Foods stop of course – will highlight the goods as I eat them throughout the week), so I didn’t get back to school until 11:30 pm. Needless to say, I didn’t make it to my 8:00 am class. At least all the notes are online.

As part of my grocery goals, I’ve been on Operation Eat out the freezer and pantry. I’ve been doing pretty well, but I still have literally 8-10 boxes of cereal. I’m not even close to joking when I say that. I’m also almost completely out of food money for the month, so if you see a lot of cereal in my future for breakfast, lunch and dinner, you now know why.

Started that bright and early this morning with a bowl of

  • Plain oikos (from Whole Foods with my Stoneyfield coupon!)
  • Nature’s Path Strawberry Yogurt cereal
  • Flaxseeds
  • Sunbutter
  • Spoonful Pumpkin Pie yogurt
  • Crumbled part of my pumpkin muffin

I actually wasn’t very hungry at all for some reason, so I had a few bites, then threw it all in a container to eat after the gym. On the way out the door, I grabbed the other half of this bar that I ate last night on my drive.

Yesssss. I found them at Whole Foods!! Definitely stocked up on 4 🙂 The taste was okay. Reminded me of another bar of some sort that I’ve had before or used to eat. Can’t put my finger on it though.

At the gym I tried on my brand new knee strap that I received in the mail this weekend! I’ve been trying to avoid the treadmill and take it easy because I can tell my knee has flared up recently, but I just had to try it out today.

  • 3.5 miles running
    • 1 mile run/.25 mile walk
    • 1.5 mile run/.25 mile walk
    • 1 mile run
    • Cooldown

I noticed my knee felt better right away when I put it on. I hadn’t even started running yet, but the achy stiff feeling was gone. I’m in love. Can I live in this? 😉

I experienced no pain whatsoever in my knee while running. None. Zip. Usually my knee is a bit achy, and I have to occasionally stop so I can bend and shake it out. However, my knee still felt it’s normal achy stiff feeling throughout the day. I guess we’ll just have to see how it works out. I did only get one though, so I might have to invest in one for my left knee (which hurts, just not nearly as bad as the right one).

Post-workout, I devoured the rest of my yogurt mess from the morning. And because I could barely stay awake in my first class, I had to get a little help to get through my 2nd class.

By the time I got home from class at 2:30, I was starving. I basically devoured the leftover part of my burrito from dinner last night.

  • Chicken breast pan-seared in a mango salsa
  • Brown rice
  • Lettuce
  • Pico de gallo
  • LF lime sour cream
  • WW tortilla

This burrito comes with black beans, but I’ve never felt that the flavors went well, so I always get the beans on the side and save them for later.

I was still rrrreally hungry, but waited for my brain and stomach to register what I devoured in 2 minutes. However, I never even got remotely satisfied – I was still ready to devour anything in sight 40 minutes later. I didn’t expect myself to be so hungry at work, so I didn’t pack enough snacks. After rummaging through their cupboards, I found a walnut, date, and raisin instant oatmeal packet which I mixed with some of my pumpkin pie yogurt I had brought. Topped with some pecans.

Tasted just like a pumpkin pie 😀

I honestly wasn’t too impressed, and the nutritional stats aren’t that hot.

170 calories in that little container? 28 grams of sugar?! I’d rather have a full cup of Greek yogurt for less, or even some pumpkin ice cream (which has half the sugar!). I think I’ll stick with my Gingerbread light yogurt 🙂 Just as yummy.

Even after my eating sesh, I was still pretty hungry for dinner. My mom buys Costco sized produce, and it usually goes bad since she and I are the only ones who eat it. So I definitely brought a few good foods back with me from home 🙂

  • Sauteed onion & asparagus with taco seasoning
  • Black beans (from last night)
  • Tomatoes
  • Salsa
  • FF sour cream

Funfetti cookies which I made yesterday! I broke up a cookie and sprinkled it into my hot chocolate. Delicious surprise at the bottom 🙂

I also found my new Christmas jammies I want.

We always get new jammies to wear on Christmas Eve night. My sisters want the same thing in different patterns. We would rock them.

Bad news: I scarfed down my breakfast, and didn’t have time to snap a photogenic picture.

Good news: It was the exact same breakfast as yesterday, so allow me to refresh your memory.

Oh hey look maybe I really am starting a ritual of Waffle Overnight Oat Wednesdays!

Then it was class, gym, class, (canceled – wooooot wooooot), class, work.

I was mad starving after my gym workout, which I’ll share with you wonderful folks.

  • 20 minutes upper body strength machines:
    • 2 sets 15 reps tricep machine (please don’t ask me the name)
    • 2 sets 10 reps bicep machine (same deal)
    • 2 sets 15 reps chest press
    • 3 sets 12 reps pull down machine (again – I’m not technical here)
    • 2 sets 12 reps tricep pull down
  • 10 minute mat work:
    • 2 sets 15 reps bicep curls
    • 2 sets 15 reps tricep extensions
    • 1 set 15 reps bicep curl to shoulder press
    • 15 push-ups
  • 30 minute treadmill
    • .2 mile warmup walk
    • 1 mile 6.0 mph
    • .2 mile walk break
    • 1 mile 6.0 mph
    • .3 mile cooldown walk

I wanted to take it easy today for me knee (it’s really been bothering me more this past week), and even that easy workout used up the whole 30 minute cardio machine limit. That’s crazy! You can barely get a 3 mile run in during that time, not including warm-up & cooldown.

Post-gym during the 15 minutes I had before class, I scarfed down this puppy.

Really good, but it might be because I was hangry hangry! Either way, I love their burritos/wraps! The bean & cheese is my favorite, and TJ’s even has their own version – the 98% FF bean & cheese burrito. Yes, I swear that’s what it’s called. At least I’m pretty sure.

I then hit the road to walk to my car. So far this week, I’ve either walked one way to school, or parked my car halfway and walked. Parking halfway is almost as fast as the bus, and I get in some extra walking! I used to walk multiple times per day when I lived closer, and I miss it. I hope to keep this up. At least until it rains.

On my way to work, I stopped by the AT&T store to exchange my phone. The lighting’s been messed up, and not lighting up everytime. And since it’s still within the 30 day exchange period, I don’t want to take any chances. The worker was extremely rude to me, telling me I have to do all exchanges at the Apple store. That was frustrating, since I went into work late specifically to stop at the AT&T store. Bad customer service really irritates me. At least tell me nicely!

Since See’s candies was right next door, I popped in there to pick up some Pumpkin spice lollipops! Last year I tried one, and when I went back to buy some more, they were all sold out! I mean every store and online were sold out.  Literally.  Gone.   Completely out of stock. So I made sure to get some earlier this year 😉

No See’s trip would be complete without a sample 😀

Milk chocolate buttercream. Super rich though. And I’m more a fan of the mocha or butterchew flavors – so I only had half.  What’s your favorite See’s candy? Mine is definitely the Butterscotch square or the Mocha.  Mmm.

Also wolfed down a Double Chocolate dreams vitatop with extra PB on the drive.

Dinner, however, was not was as tasty as it looked.

Grilled zucchini, BBQ tofu, spinach & ricotta on grilled whole wheat. Okra fries with ketchup. And extra grilled zucchini.

The sandwich was really bland – I think that bread was old. So towards the end, I just ate the insides of the sammy.

While the foreman was on and sexy hot, I threw some figgies on there as well. Topped with some ricotta cheese + maple syrup + cinnamon mixture.

Mmm – thought I’d be way full eating my dessert 5 minutes after dinner, but surprisingly not.

I also snagged a couple peanut M&M’s. Sorry figs. You were a great dessert, but you were no chocolate.

Okay – off to do lab work I procrastinated on all week.

Uncle Kracker song anyone?  Anyways, first things first guys. I never thought I would say this, but, I now have a twitter. Follow me? Fly after me? Soar after me? Whatever birds do…do it. I know almost everyone else in blogland has a twitter, but I don’t know how to find y’all! I’m obviously new to it. So anyone else? Post your links, I guess!

I started out the morning with a 2 mile walk. My knee has been very tender and sore since my outside run last week. I did do a couple treadmill runs this weekend (which I’m sure didn’t help), but it’s really amazing how much more outside really irritates my knee. Unfortunately my school gym is closed for 3 more weeks. I guess I can try a track?

I knew exactly what I wanted for breakfast again this morning. Overnight muesli of course!

I soaked overnight:

  • 1/4 cup muesli mix
  • 1/2 cup almond milk
  • 2 spoonfuls strawberry chobani
  • Cinnamon, vanilla & squirt of maple syrup
  • Chopped date

This morning I mixed in Banana Nut Cheerios and then topped it all off with:

  • 1/2 chopped nectarine
  • Rest of the strawberry yogurt (about a spoonful)
  • 1 spoonful almond butter
  • Zoe’s cinnamon raisin granola

I wanted some crunch on top and went in search of granola. I saw this box was “Best by August ’09” so I knew I needed to open it up and use it pronto! I forgot how much I love Zoe’s granola!

K guys, this stuff is awesome! Although not as good as it was mixed with banana (I had none last night 😦 ), it was still yumm-o in my tumm-o!

Then it was off to work! The little baby was adorable today (although I did get spit-up on about 4 times. Why do I shower beforehand again?) She couldn’t stop giggling at one point! Too cute 🙂

Lunch was a Cedarlane bean & cheese burrito I grabbed quickly out of the freezer. I really didn’t plan ahead for lunch! Topped with a dollop of guacamole.

These burritos are amazing for a quick frozen meal. All organic, the ingredients list is so simple. All it really contains are: organic Pinto Beans, Organic Brown Rice, Soy Cheddar Cheese, Organic Tomatoes, Organic Tomato Puree, spices & a tortilla. I love how it’s soy cheese & brown rice!

My 30 minute drive home was spent thinking of what to make for dinner.  I have an insane amount of food that needs to be used up (I always come back to school from home with soooo much food loaded up in a cooler 😉 ), so I have a ridiculous amount of meal options! I do, however, have a couple perishable bulk items that I need to use up quickest (more quickly, quicker…??).

I got this large Cranberry Quinoa Salad with Pumpkin Seeds container at Costco:

Quinoa, tart cranberries and raisins, balanced with the smoky flavor of toasted pumpkin seeds, infused with the taste of honey.

It’s delish!! While it has delicious and wholesome ingredients, it’s pretty calorie and fat dense (due to added canola oil) for the 1/2 cup serving (which is a teeny amount!), so I’m trying to find different ways to beef it up. I know I can just eat it straight up, but that get’s boring, right?! And what fun is that? 😉 I’ve already stuffed it into bell peppers.

I was starving tonight and had no unique ideas, so to “spice it up” I cooked up some nectarine pieces and mixed those in with some feta cheese.

The feta cheese really added to it. I’ll probably mix that in again. Anyone have any other good ideas to use this for? I’m already thinking a wrap filling.

Is it weird that quinoa never keeps me full very long? It always surprises me because it has so much protein & fiber. But I’m always hungry so soon after. I ventured downstairs just now in search of something…something…ahhh some nut butter 🙂 Never fails.

Also enjoying the CMA Music Fest: Country’s Night to Rock tonight. I wish I could go to a major festival like this! How fun 🙂 Also squeezed in 15 minutes of ab work at one point while watching. That makes up for my ultra laziness all day right?

Speaking of country music, Rascal Flatts added a new stop to their concert in San Jose (30 minutes from my house). YESSSS!!!! 😀 My sisters and I jumped at this and purchased tickets A-stat. Prior to this addition, they didn’t have any concerts in CA at all! We’re excited. I’ve heard they’re amazing live.

So I joined in on the Breakfast Challenge and luckily I remembered yesterday morning while I was already making my yummy oat combo. So to make it “new” I added fresh figs on top!

  • 1/2 cup oats
  • 1/2 cup FF milk; 1/2 c cup water
  • 2 egg whites (used egg whites today instead of a full egg to test it out)
  • Cinnamon & vanilla extract
  • Skippy natural chunky PB

Topped with:

  • Justin’s maple almond butter
  • Banana nut cheerios
  • 2 chopped figs

Verdict? Yum! It was very very tasty 🙂 But I actually prefer it without the figs – I’m just not a huge fruit & oatmeal combo person.

I honestly don’t remember what else I did yesterday (besides gym & Whole Foods). Another run? Oh yes sir!

2.25 mile run interval (last week was 2 miles),

3 minute walk

1.75 mile run.

Total: 4 miles running (5.15 miles including all the walking)

I’m feeling really good about my treadmill runs the past couple times. My knees have felt stiff during and immediately after the runs, but have not been sore later in the day or in following days. This is unheard of!! Could that second cortisone shot really have done it’s job?!? We’ll see how it feels when I actually run outside.

On my drive home from Whole Foods/Target, I snacked on this new Think Thin Cookies & Cream bar (I have a couple buy-1-get-1-free coupons so I stocked up). Sorry for the blurry car pic:

Blech blech blech!!! I’ve never wanted to try these because they’re “sugar-free” so obviously made with fake sugars, and it tasted just like Promax cookies & cream bars (which I used to like, but can’t stand now). Nasty nasty aftertaste from these!

On to dinner…stir-fried veggies, garlic-lime chicken patty (chopped up), and Trader Joe’s mini cilantro chicken wontons (these are delish!):

I also snacked on a few things while prepping dinner (including some of the above pizza crust), so I was pretty full after din. But not full enough for dessert later on 🙂

There has been so much talk over the blogs about coconut milk ice cream so I was very curious to try it out myself. The coconut taste was pretty strong at first (and not being a fan of coconut, I was a little disappointed). But after a few bites, it became more and more delicious. I really do like it! I wish this particular ice cream had a bit more fudge and cookie pieces in it though 😉

This morning to continue with the New Breakfast challenge, I heated up some frozen blueberry-banana-buckweat pancakes, and topped them off with blueberry syrup!

The syrup was obviously the “new” part to my breakfast – first time making it! I just combined blueberries (fresh ones that we froze) and syrup on the stove to boil and mash! This time I used sister’s more artistically made plate:

Well us girls (aka me, two of my sisters, and my mom) were going to go see Time Traveler’s Wife tonight, but guess those plans fell through. I guess that’s on the agenda for tomorrow night! I’ve heard it’s good (although different from the book). Eric Bana doesn’t hurt either 😉

Okay, I’m not sure exactly what Tuesday means.  But it does mean that The Bachelorette was on last night!!  It’s gettin’ down to the final home stretch….get excited!  Any thoughts on what happened?? I have to say the bedroom scene was a slight letdown!

I can’t tell you how restless I was Sunday night!  I tossed and turned until 2 am, reading (I finished my book…more on that later), facebook stalking…y’know, the usual.  I went downstairs 2 or 3 times to get food because I was so hungry! I’d forgotten the kind of appetite long runs (or long hikes) will make me!  Crazy!!

Yesterday morning I jumped on the bandwagon and made…

You got it!  Oatmeal in a Jar!! I had transferred my Naturally More PB into a glass jar (so I could microwave it to make it melty/spreadable), so I used the leftover container for oats!

Topped with a mix of:

  • another spoonful of PB Loco chocolate chip cookie dough,
  • TJ’s just flattened bananas
  • Kashi golean cereal
  • Feed granola

The first flavor of this granola I decided to try was the Cinnamon Raisin flavor, which I have to say, tastes exactly like an oatmeal raisin cookie!  No joke! About halfway through my oatmeal (after I’d finished off all the toppings), I tried out the Blueberry Almond flavor.  Mehh, it tasted like a generic, normal granola.  I definitely like the Cinnamon Raisin flavor better, and I’ll let you know what I think of all the others.  And speaking of granola, you can mix your OWN creation here!

Anyways, it was so fun to eat my oatmeal out of a peanut butter jar!  Can’t wait to be done with my next batch!

Then off to my PT appointment! It was…nothing special.  I explained to him the past 3 months, where it hurts, how much, pretty much everything I explain to the doctors.  He tested out some stretches, moved my knee around a bit…In the end all I really did was 3 different types of strength moves to strengthen the hamstring muscle.  After reading about Caitlin’s PT experience, I was hoping for some information on how to incorporate running back into my life, taping/knee braces, stretches, etc.  If he doesn’t bring it up at the next meeting I’ll ask about those things.  I just don’t want to pay $20 every time to do a few strength moves I can do at home!

Work was work, where I had this spread for lunch/snackies through the afternoon:

Leftover slice of Kashi veggie pizza to tide me over for the drive (literally just grabbed it out of the fridge on the run – I was late & hungry!)

And lunch a little later while at work.  Kashi veggie medley pocket (with some marinara sauce for dipping), blueberries, apricots, cherries (quite the fruit spread!)

This morning I allowed myself some sleep in time 🙂 And hit up the gym slightly later than normal to do 30 minutes stairmaster level 11.  Oof my arms were ridiculously sore today (especially my bulging biceps 😉 )…I think from my hike?  I guess because I was crouching and supporting myself with my arms so much as I slowly inched down the hill – yowza!  My arms haven’t been this sore in ages!!  And then since I did actual strength yesterday, and also didn’t want to do anything else to stress my knee (since it was a little sore from the downhill hike),  I hopped in the pool for a quickie 25 minute swim.

  • 1300 yards
    • 800 free
    • 500 pull with paddles

I felt strong and fast today!  And no pounding headache!  Unfortunately, even though I felt great, I couldn’t swim long…work was calling!!

Lunch: Burrito filled with cheese, rice, black beans, & a mixture of veggies (potato, zucchini, yellow squash, bell pepper, onion, tomatoes, green chilis, & cilantro).  Guacamole (yes – it’s a delicious looking brown, but it was still tasty!) for dipping, a side of cherries, apricots x3, and strawberries/blueberries for a snack.

After work I ran to Costco where I picked up this incredibly soft blanket for only $12.99!!  It’s unbelievable!

I literally stood staring at the blankets for probably 20 minutes because I couldn’t decide between this color or a dark, shimmery gray.  I’m kind of wishing I got the gray, but oh well!  This one is still nice as well!

Then hurried home for dinner where I tried to make a Greek meal.  Unfortunately, I had no pita bread, so I used quinoa instead.  Quinoa mixed with sauteed onions, orange balsamic vinegar, and feta cheese.  Topped off with falafel veggie balls and huge scoops of yogurt & cucumber raita dip.

IMG_4072-1Times the amount of dip here by like 5!  haha.  I just kept adding more.  With an unpicture spinach salad I ate while it was all cooking.

In a bit I plan to whip up the unbelievable banana magic that seems to be spreading through blogworld like the plague.  Although this stuff may be even more deadly than the plague.  According to reviews, it’s amazing!! I’ll let you all know how it turns out tomorrow 🙂 Talk about a cliffhanger!
