Dayumnnn weather – you be lookin’ GOR-geous today!!  Keep it up Winking smile

Today started out with some gym time.  I usually go do weights for about 30-40 minutes, but I felt pretty awful when I woke up, and decided to head in later at like 7:00 instead of 6:30. So I got in:

  • 15 minutes easy weights (including pull-up machine…working on that!)
  • 25 minutes abs class

Let me tell ya’ – doing ab work is dang hard with a boot on my leg.  I don’t know how much it weighs, but it ads to the intensity!  Of course I have to modify planks and such though.

Breakfast wasn’t eaten until 9:15 at work:

Voskos Greek yogurt (topped with a bit of granola)

…mixed with some Trader Joe’s honey apple butter.  It’s definitely yummy, but just reminds me of extra sweet applesauce.  It’s good, but I’d rather have jam (or pumpkin butter!!). 

While at work at snacked on watermelon which I was asked to cut up:

Lunch (prepared in my wok – love love this thing) – stir-fryed broccoli slaw with ground turkey and enchilada sauce.  Sounds weird, but it was tasty!

Topped off with some Jalapeno greek yogurt dip (found at Costco) instead of sour cream.

I also snacked on 2 small random pieces of chicken while this was cooking.

And a couple carrot cake cookies for dessert.

I got this container 75% off at Cost Plus the other day, and have been plowing through.  Love you after-holiday sales!

I failed yet again at taking a picture of dinner at work.  It rarely rarely happens since I don’t carry my camera/phone around with me in my pocket (obviously), and we go straight on break into the cafeteria. Unfortunately, I just have to describe it to you Winking smile

  • Creamed spinach (so so good!)
  • Steamed broccoli
  • Vegetable soup (Au Bon Pan)

There are always 2 entrees, 2 vegetables (not always healthy steamed vegetables Winking smile), and 2 starches as options in the cafeteria.  Plus a salad bar, prepackaged wraps/sandwiches, and a soup.  The entrees are often foods I don’t eat (red meat, over-dried meat, meat with skin, etc), so I often go for the salad bar, veggie sides, and soups. 

Once home, I self massaged my tibial tendon (where I’m having lots of pain – right above my inner ankle), and snack on my new favorite dessert – frozen blueberries topped with a peanut flour sauce (will take a picture next time, promise!!).

By the way – yes I am counting calories (as part of my weight loss/fit back in my pants plan).  And today’s calorie count totaled out around 1500.  Probably a little more since I estimated on my peanut flour sauce and snacked on a few unmentionable carrot cake cookies Winking smileI don’t necessarily like to talk calories on the blog (since I know many people do not like that, and I don’t want it to become all calorie talk since I don’t like that either), but I will occasionally talk about it.  Just the facts!

 

PS – yayyyy we made it through Monday!! (even though today is technically my Tuesday at the hospital, it is still my Monday at babysitting).

Fact or Fiction?

Fact: My breakfast this morning reminded me of the American flag.

Fiction: That these pomegranate seeds would be good until January 31st like the label said.  Last I checked today is the 28th and they were already tasting slightly tangy/gone bad. 

Fact: I still ate them though.  And plan to finish off the container today to prevent them from going…more bad.

Fiction: I ate only fruit and yogurt this morning. 

Obviously I added some cereal.  Quaker corn bran crunch to be more precise.

Fact: My boss was making sunflower seed butter cookies at 8:30 this morning.

Fiction: I completely stayed away from all said cookies and didn’t enjoy one crumb.

Fact: I ate one two.

Fact: I went for a walk with the babes today downtown to Starbucks and back (2.5 miles roundtrip).

Fiction: I took a picture of my Grande iced SF hazelnut coffee light ice.  With a splash of half & half. 

Fact: I love how I not only get a free dinner when I work, but I also sometimes get leftovers if I have enough food.

Fact: I’ve been pretty good about taking my calcium vitamin with lunch lately.

Fiction: Yummy orange carbonated drinks tend to help in absorption of calcium pills.  Especially when out of a stolen borrowed pint glass from the local pizza joint.

Fact: My old roommate snuck so many of these pint glasses in her purse that she had enough to give me my own set of 8 glasses.  Cool.

Fact: I went on a 1 hr 45 minute hike today.  Which probably wasn’t the smartest idea for my calf/ankle.

Fiction: I remembered to take a picture of my post-hike snack while chatting with the roommate.  Let’s say it was a small portion of plain yogurt with the rest of the pomegranate seeds.  (That part would in fact be a fact).

Fact: I froze in my tracks when I saw peanut butter cream cheese at Trader Joe’s today.  Yes.  Peanut. Butter. Cream Cheese. 

Fiction: Obviously I could resist.  And didn’t have any taster once I got home.

Fact: I waited to eat at babysitting tonight because I figured they’d have delicious yummy food, since they have in the past.

(Salad with tomatoes, goat cheese, and a sprinkling of walnuts.  With pear vinaigrette.  And a few veggie chips on the side.  Which ended up in my salad).

Fact: This dinner was enough to hold me over for oh…2 hours.  And then I had froyo.  Yummmm.

Polar Bears aren’t tacky

The dough balls were a hit (extra oily and all).  I also enjoyed a glass of champagne + 2 red jell-o shots.  The green was lime and I’m not a fan.

 

I’ve been really bad about taking pictures of every single meal lately.  But that probably just means they’re uninteresting.

That’s a lie.  Even my photographed meals are uninteresting.  Such as my Fiber One Mocha bar grabbed for breakfast on Sunday morning.

And my mid-morning snack around 7:30 am between breakfast #1 and breakfast #2.  The fiber one bar wasn’t doing its job and I was hungry!!

Sunday I got off work at 2:33. 

It was pouring.  I mean pouring all day long.

I came home.  And want to know what I did between the hours of 3:00 and 10:30? 

Sat on my butt.  And watched TV.  No joke.  Exactly what I wanted to do.

Afternoon snack was some leftover frittata:

And dinner was the last of the frittata.  So much variety I know.

This morning for breakfast I heated up a Life cinnamon roll bar to put in my yogurt:

I haven’t mentioned it yet, but I’ve given up peanut flour for the time being.

I know what you’re thinking.  “3258703958038tyerkgdskgndkgdsigh?????*&**((((*****EDG”

A.K.A: “Why?!?!”

Well, in the past 3 months, I have been breaking out (acne wise – not dancing wise) like crazy.  I mean, 3, 4, 5 giant whiteheads at once.  TMI?  Gross?  Sorry. (Said in Gilly voice) I always had bad skin as a teenager, but it got better as I got older, obviously.  It’s still bad, but not horrible.  Anyways, I racked my brain on anything I was doing different.  I drank my water.  I changed my face wash.  Changed my face lotion.  What was going on?

Randomly, peanut flour popped in my head the other day.  I started eating it about 3-4 months ago.  And that was right around when my acne problem started up.  Curious, I googled it, and I actually came up with a lot of sources that say peanuts may cause an increase in acne problems!  Weird.  Most say it doesn’t cause the acne, it just might make it worse (hence why it made my already acne-prone skin flare up). 

Of course everyone has their own opinions on it, I just thought it was something to try and cut out and see if it helped.

Please keep in mine that I was eating a good amount of peanut flour – probably anywhere from 1/4 – 1/2 cup daily.  And plain peanut butter wasn’t causing me this problem in the past most likely because I wasn’t eating nearly as much as I was of the peanut flour.

Anyways, moving on…

Lunch came in the form of a 1/2 sweet potato topped with chili and hummus:

Tomorrow is Tuesday.

Duh.

But do you know what that means??  It’s my last day of work for 5 days and I’m going HOME!!!  Home for the Holidays.  I’m so excited to:

  • Sleep
  • Have no work stress
  • See my family
  • Hang out in front of a real Christmas tree
  • Sleep
  • Sleep in
  • Listen to music
  • Be home with the family
  • Have I mentioned sleep yet?

Who stole the onions?

Who me? Not me! I would’ve if I had an onion jar.

Aren’t these flowers so pretty?  I saw them on a walk – my favorite colors!!

I really wasn’t feeling too hot yesterday due to the fact that Tuesday night was pint night downtown.  Heh.  Whoops.

Anyways, I hadn’t eaten much all day (think toast & cookie dough), and knew I needed some sort of nutrition before my afternoon hospital shift.  I also happened to be downtown near a deli I’ve always wanted to try.  I never eat out anymore – this was such a splurge!!

Smoked turkey, brie, & cranberry pecan relish (which I later found out they charged me an extra $2 for!?!  Ridiculous).

Hold the phone!!  Where are my onions??  If you’re gonna overcharge me for my relish, at least remember the onions!

Add avocado and this could easily have been the best sandwich of my life.

Would you believe me when I say this morning was my first time trying full-fat yogurt?  WOW – look how thick & creamy (do I even need to say it?  Really?  Fine.  TWSS).

I actually didn’t even realize this was full-fat until I took my first bite and moaned.  Mmmm.

With cereal of course.

I rarely buy sugary flavored yogurts, and never buy expensive brands such as Brown Cow.  But when it was on sale at Vons for 10 cents more than my Safeway brand yogurt (55 cents!!) I knew I had to try it!

In non-food-random-thoughts/news-bullet-form-ramblings:

  • I worked 11 hours today
  • Watched Inception last night (which was awesome, but I was slightly confused on the point – such as why they were going into that man’s dream?? Maybe I missed the whole point of the movie.  Probably)
  • Am excited to go to the gym tomorrow.
  • Ate way too much crap today – babysitting does that to me.  Boredom eating? Most likely.
  • Have a canker sore on my tongue.  The tip of it.  So I keep rubbing it on my teeth making it worse.  Figures.
  • TV Guide says “Back to the Future Part 2” is on TV right now, but really it’s part 1. How dare they.  They should know better.

 

PS: Word to the wise – this is what happens when you make popcorn after a night out and leave the container next to your bed.  I definitely didn’t realize it was there when I got up in the morning.

Soup’s on!

Yesterday was a little better in the hunger department.

I started off with pumpkin yogurt topped with a crumbed muffin, almond butter & pumpkin butter.

After a couple of errands, I came home freezing and remembered I’ve been wanting to use my butternut squash to make soup!

Simmer simmer!

I microwaved ~ 1 lb. of butternut squash cubes.  Then mashed them before putting them on the stove with about 3 cups of low sodium chicken broth.

However it seemed way too thin, so I had the brilliant idea of overloading it with pumpkin.  Then decided to add the rest of my broth to make TONS of soup.  Simmered for 20 minutes.  Took out the chunks and pureed them in the blender.  Then I seasoned it with nutmeg, pepper, and a bit of sugar and cooked a tad bit longer.

At first I didn’t really like it, it grew on me and ended up having 2 huge mugfuls.  And croutons put it over the top.  I ended up declaring this soup delicious.

Dinner was inspired by the fact that I needed to use my sweet potato.  And since I was too hungry to wait for sweet potato fries to bake, microwave it was!

Topped with pineapple flavored cottage cheese.  I also sprinkled the actual potato with cinnamon and spread some pumpkin flavored cream cheese on there.  Delish.

And I admit I devoured a can of green beans while I was waiting for the potato to cook.  I like canned green beans.  Guilty.

I would thinking of something interesting and/or creative to say right here, but it’s late and we’re about to watching Harry Potter #6 (in preparation of seeing Harry P in the theaters tomorrow!).

Mug Time

Hi friends. 

Today hasn’t been as productive of a day as I’d hoped.  I did head to Costco after my morning nanny job to pick up some food items.  I local gym is offering no enrollment fee if you bring in 50 items of food. 

24 cup of noodles and 26 granola bars?  Hope they accept that! Winking smile

Not that I even have time to go to the gym, but I’m thinking of joining.

However, the membership fee is still $50/month.  Not bad for such a nice place (it’s more of a club and has a pool, exercise classes, etc).  I can join my old college’s gym for $20/month, but it’s always so crowded, exercise classes cost extra, and there’s always beefed up too-cool-for-school dudes working out and checking out the ladies. 

Decisions decisions.

 

Yesterday I purchased a pumpkin scone on impulse at Borders.  I see pumpkin.  I want pumpkin.  And it’s going out of style season soon.

This morning I crumbled half of it over some Fage.  (Greek yogurt addiction is re-sparked, and I took advantage of the Fage sale at Vons).

But first, I mixed the peanut flour and pumpkin butter into the yogurt to flavor and sweeten it up a bit.  Instant peanut butter pumpkin yogurt!

Then topped with the delicious scone.

I am not a scone person, but this one was so good.  Soft, yet crumbly – almost muffiny tasting.  Much better than Starbucks’ pumpkin scone.

 

At work I snacked on unpictured handful of veggie booty & prunes.  They’re actually tasty.  And I’m not sure why they’re known for “constipation relief,” so to speak.  There’s not a ton of fiber per serving (3 grams).  There are much higher fiber foods out there.

And then I headed off to Costco where it was samples galore! I should have snapped pictures, but here’s the lowdown:

  • Peppermint bark (tiniest tiniest piece)
  • 1/3 chocolate truffle (another tiny piece)
  • Pumpkin swirl bread (a good sized piece)
  • Pumpkin raisin bread
  • 1/2 mozzarella stick
  • Brownie nibblin’
  • Tortilla chips
  • Something else I don’t remember.  Now it’s really bugging me what it was

I even skipped the chicken sausage/chicken burger station.  It was crowded and I was stuffed.

I walked into Costco not needing a single thing.

I walked out of Costco $38 poorer. 

Figures.

 

I didn’t think I would be hungry until dinner, but alas:

Dinner was just leftover chicken gumbo soup I brought home from work the other night.

I was apparently in a mug-mood today.

 Plus a big ol’ bowl of steamed green beans.  Mixed with cheese.  Because cheese makes everything better.

This was all followed by a wine + brownies + cookies night with the roommates.  We attempted to watch Toy Story 3, but that didn’t happen.  I had a bit too many glasses to go along with my “no sweets and drinking plan.”  Not too many to feel drunk/hungover.  I am quite a “heavy-weight” after all. But too many to fit into my “healthy” budget I’m trying out here.

Oh well.  Wine can be healthy….right?

If I thought I was hungry the day of my half, I was possibly even more hungry the day after!  I literally ate every 2 hours, if not more. 

9:45 (luckily my job let me sleep in!) – whole wheat waffles topped with syrup & pumpkin cream cheese.

11:30 rolled around, and my appetite was high!  I had a small bit of a pesto turkey sandwich at work.  About half of a half…so pretty much a 1/4.

And then made my real lunch at 12:30 – Trader Joe’s black bean and corn enchiladas.

There was no sour cream in the house, so instead I sprinkled it with feta cheese.  Which was a brilliant idea.

I actually wasn’t super hungry come 2:30, but I needed a snack pre-work.

But of course I was starving at work about 4:30.  I snagged some trail mix and chowed it down fast.

At 6:30, we breaked for dinner.  Nothing too appetizing on the hot foods bar, I stuck with a salad.  As my co-workers said “the mother of all salads.”.  Hey – I like ‘em big. (mixed greens, blue cheese, kidney beans, beets, pickles, sunflower seeds, raspberry dressing).

8:30 rolled around, and 2 hours post-dinner I was hungry…right on schedule!

And around 11:30 I got out of bed after trying to fall asleep on an empty tummy.  It wasn’t working.

I’m going to be honest here – as I was looking at these today, I wasn’t all too happy.  I said to myself that they weren’t “very flattering” and I found myself getting down on how I looked in these pictures.  (I’ve mentioned how I’ve recently had a good amount of weight gain, and how I’m dealing with that).  I was kind of put off by these.  I knew it wasn’t good of me to think these thoughts, but I couldn’t help it.

Later I realized how incredibly awful I was for critiquing myself the way I did.  These pictures demonstrate me running 13 miles for crying out loud.  And here I was critiquing my body.  These pictures prove the strength and stamina that my body has to offer.  How dare I think poorly of it?
