Uncle Kracker song anyone?  Anyways, first things first guys. I never thought I would say this, but, I now have a twitter. Follow me? Fly after me? Soar after me? Whatever birds do…do it. I know almost everyone else in blogland has a twitter, but I don’t know how to find y’all! I’m obviously new to it. So anyone else? Post your links, I guess!

I started out the morning with a 2 mile walk. My knee has been very tender and sore since my outside run last week. I did do a couple treadmill runs this weekend (which I’m sure didn’t help), but it’s really amazing how much more outside really irritates my knee. Unfortunately my school gym is closed for 3 more weeks. I guess I can try a track?

I knew exactly what I wanted for breakfast again this morning. Overnight muesli of course!

I soaked overnight:

  • 1/4 cup muesli mix
  • 1/2 cup almond milk
  • 2 spoonfuls strawberry chobani
  • Cinnamon, vanilla & squirt of maple syrup
  • Chopped date

This morning I mixed in Banana Nut Cheerios and then topped it all off with:

  • 1/2 chopped nectarine
  • Rest of the strawberry yogurt (about a spoonful)
  • 1 spoonful almond butter
  • Zoe’s cinnamon raisin granola

I wanted some crunch on top and went in search of granola. I saw this box was “Best by August ’09” so I knew I needed to open it up and use it pronto! I forgot how much I love Zoe’s granola!

K guys, this stuff is awesome! Although not as good as it was mixed with banana (I had none last night 😦 ), it was still yumm-o in my tumm-o!

Then it was off to work! The little baby was adorable today (although I did get spit-up on about 4 times. Why do I shower beforehand again?) She couldn’t stop giggling at one point! Too cute 🙂

Lunch was a Cedarlane bean & cheese burrito I grabbed quickly out of the freezer. I really didn’t plan ahead for lunch! Topped with a dollop of guacamole.

These burritos are amazing for a quick frozen meal. All organic, the ingredients list is so simple. All it really contains are: organic Pinto Beans, Organic Brown Rice, Soy Cheddar Cheese, Organic Tomatoes, Organic Tomato Puree, spices & a tortilla. I love how it’s soy cheese & brown rice!

My 30 minute drive home was spent thinking of what to make for dinner.  I have an insane amount of food that needs to be used up (I always come back to school from home with soooo much food loaded up in a cooler 😉 ), so I have a ridiculous amount of meal options! I do, however, have a couple perishable bulk items that I need to use up quickest (more quickly, quicker…??).

I got this large Cranberry Quinoa Salad with Pumpkin Seeds container at Costco:

Quinoa, tart cranberries and raisins, balanced with the smoky flavor of toasted pumpkin seeds, infused with the taste of honey.

It’s delish!! While it has delicious and wholesome ingredients, it’s pretty calorie and fat dense (due to added canola oil) for the 1/2 cup serving (which is a teeny amount!), so I’m trying to find different ways to beef it up. I know I can just eat it straight up, but that get’s boring, right?! And what fun is that? 😉 I’ve already stuffed it into bell peppers.

I was starving tonight and had no unique ideas, so to “spice it up” I cooked up some nectarine pieces and mixed those in with some feta cheese.

The feta cheese really added to it. I’ll probably mix that in again. Anyone have any other good ideas to use this for? I’m already thinking a wrap filling.

Is it weird that quinoa never keeps me full very long? It always surprises me because it has so much protein & fiber. But I’m always hungry so soon after. I ventured downstairs just now in search of something…something…ahhh some nut butter 🙂 Never fails.

Also enjoying the CMA Music Fest: Country’s Night to Rock tonight. I wish I could go to a major festival like this! How fun 🙂 Also squeezed in 15 minutes of ab work at one point while watching. That makes up for my ultra laziness all day right?

Speaking of country music, Rascal Flatts added a new stop to their concert in San Jose (30 minutes from my house). YESSSS!!!! 😀 My sisters and I jumped at this and purchased tickets A-stat. Prior to this addition, they didn’t have any concerts in CA at all! We’re excited. I’ve heard they’re amazing live.

The weekend at home was pretty uneventful, but I did get to see my sister compete in her first gymnastics meet in Sacramento!

I’m so happy I got to see her compete in all 4 events. It was amazing to watch what she works so hard for each week, and I was so proud of her 😀

I didn’t capture everything this weekend, but I did get a few.

Friday’s deliciously dense cinnamon raisin Ezekiel english muffin with almond butter, tayberry jam, & smushed banana:

Breakfast before we left for Sacramento was a honeydew fruit bowl (I actually had this Saturday and Sunday).

Filled with strawberries, blueberries (extremely sour ones!), white nectarine, Chobani yogurt, and a sprinkling of Strawberry & Yogurt Nature’s Path:

Soooooooo full after all this! But delicious.

I completely forgot to take a picture of my taco salad dinner at El Balazo, but remembered to snap one of the leftovers before I devoured them the next day:

A bunch of ice cream was consumed. Some more of this Tennesee Mud Pie coconut milk ice cream (simply amazing stuff) along with Breyer’s free cookies & cream.

I actually really really like this fat free ice cream. Most fat free (and even some low fat) varieties have that awful taste to them. But this stuff is creamy and delicious! It’s different, but I love it!

This (and a honey graham clif z-bar) were devoured in hunger at the meet. It was good, but I like the cashew flavor better.

An unpictured McDonald’s soft serve cone. Yummm. I forgot how delicious their cones are!! And for one dolla!

I just arrived back here at school at about 10:30 and raided the kitchen hungry!! After some spoonfuls from the froyo carton, I settled on a rice cake spread with almond butter and sprinkled with Banana Nut cheerios & a few chocolate chips:

Twas tasty – but I think I like it with jam on it as well.

Oh yay The Notebook’s on TV!  Time to lay in bed, catch up on google reader, and cry my eyes out hit the sack!

As Ellie correctly guessed, my first surprise package contained some Nature’s Path cereal! Now I’ve had the pleasure of trying Nature’s Path products in the past, and the three samples that were sent to me, and I love them. They kindly sent me Flax Plus Maple Pecan Crunch cereal, Optimum Strawberry & Yogurt cereal, and the Vanilla Almond Flax Plus granola.

The first thing I tried was the Flax Plus Maple Pecan Crunch Cereal on in my yogurt mess.

“Toasted crunchy flax flakes are combined with a granola made of golden-hued, real maple syrup and roasted pecans.”

I could smell the maple goodness right when I opened this box and it was in every bite!! I’ve tried their other “crunch” cereals such as Red Berry Crunch and Pumpkin Raisin Crunch, neither of which I was a huge fan of. But I couldn’t help but eat these right out of the box as I was bagging up my cereal to take to work 😉 Definitely, definitely a delicious cereal that I would pick up in the store.

Next, I dug into the Optimum Strawberry & Yogurt cereal for a little pre-run fuel.

And on my overnight muesli mix:

“Introducing Optimum Strawberry & Yogurt, a new cereal for people who want to have their “cake” – in the form of delicious, organics strawberries and yogurt covered crispies – and eat it too.”

Taste? Delicious!!! I seriously think this may be one of my new favorite cereals. While there was the strawberry flavor in every single bite, I was kind of disappointed by how little actualy dried strawberries there were in the box.

Those were seriously the only strawberries I saw in the whole bag! Other than that, this cereal was fabulous. And at 170 calories, 3 grams of fat, 5 grams protein & 7 grams fiber for 1 cup, I’m sold!

The last product was the Vanilla Almond Flax Plus granola. I just snacked on this straight from the box 😉 I love vanilla granola (especially the kind from Trader’s!) and this was sweet, vanilla-y, and delicious! One thing I also like about these cereals is the fact that they all contain flaxseed and therefore omega-3s!

Other than these 3 samples, I’ve also tried other products on my own, and my favorites include:

  • Pumpkin Flax Plus granola (my favorite granola ever)
  • Pomegran Plus granola (tasty, but I prefer the pumpkin)
  • Millet rice flakes (delicious flake cereal – one of the best)
  • Peanut Butter Panda Puffs (little cereal balls of PB goodness!)
  • Maple Cinn waffles (probably my favorite waffles ever – strong maple flavor!)

Starbucks had samples out this morning of something that stares at me every time I order a coffee – the Bear Claw! I completely forgot to snap a picture before I devoured it, but you can imagine 😉

It was amazing – doughy, mapley, with bits of carmely apples. Mmmm.

I ended up meeting my mom and sister at Chili’s for lunch on my drive home. I was kind of bummed when I heard the plan since I literally was still full from my breakfast 4 hours earlier (that baby was filling!!). Unfortunately, that didn’t stop me from eating…whoops!

We ordered the “2 for $20” which included an appetizer, two entrees, and a dessert. My sister is obsessed with their queso, so that was the appetizer, although I just stuck with the chips & salsa.

Had a bit more than my fair share 😉 They were directly in front of me!!

I love their chicken fajita pita, but that wasn’t included on the entree list for this deal, so I settled on the Quesdailla Explosion salad. I ordered no cheese & dressing on the side, thinking I would be able to pick off the tortilla strips. But they ended up coming mixed into the salad – oh well.

(I got this picture online because I unfortunately couldn’t get a picture of my actual salad – I went to the restroom, and when I got back to the table, my salad had arrived. However my mom had mixed it together and put some on a separate plate for herself since we were sharing. Anyways long story short, it wasn’t such a pretty picture anymore 😦 )

This used to be my favorite choice there, and I have to say I was madly disappointed. The chicken used to be strips, and now they were small oily pieces of chicken. There was also no lime wedges (like I remember there being), and less relish.

And then dessert – we chose the Chocolate Molten Cake.

I was ridiculously full by this point, and wanted to only have a couple bites to try it, but probably had about 1/4 of this. Oh well – how often do I get to go out to Chili’s and enjoy dessert? 😉

I left with Mr. Chili’s food baby.

Afternoon snack was some cherries:

Our sinks are broken at home!! Therefore, I couldn’t really cook anything for dinner (unless I wanted to do dishes in the bathroom or in a big bucket of water! Ummm).

We ended up picking up these new pizzas they make at the Safeway deli counter. I got the Greek Salad pizza – pizza sauce, feta cheese, onions, tomatoes, & bell peppers cooked on a flatbread. Then topped with a greek salad mix of marinated cucumbers, tomatoes, olives & a bit more cheese, and lettuce.

This was only half the pizza – they were pretty big! But my stupid brain wasn’t caught up with my tummy and I ended up eating the other half too.

(No salad on this one, I piled it all on my first half – so I sprinkled extra seasonings on it)

It was OK, although it really didn’t taste much like pizza. It was something I could easily make at home, and it even tasted kind of bland. My dad said the same about his.

Today was definitely a day of overeating. While I feel I made relatively healthy decisions, and still enjoying myself while dining out to eat, I ate past satisfied at every meal. Hopefully tomorrow is back to normal, and I’ll definitely be hitting up the gym in the morning! Two days off is enough for me!

Muesli Take 2

So last night I was in lying bed when it popped it my head that I had wanted to try soaking my muesli overnight. So yes, I hopped out of bed, and went downstairs half-asleep to prepare my breakfast.

I read that Angharad loved her overnight oats with a mashed banana. So I combined

  • 1/4 cup muesli
  • 1/2 cup soymilk
  • 1/2 mushed banana
  • Raisins
  • Squirt of maple syrup

This morning I then mixed in some strawberry chobani, my remaining strawberries & white nectarine, and a sprinkle of cereal.

Okay it was soooooooooooooo good!!! I hadn’t been a fan of overnight oats in the past, but the banana made all the difference. Delicious!!

I definitely didn’t practice intuitive eating this morning, since I was pretty full but kept eating this deliciousness. Next time I probably wouldn’t add the stawberries on top – they were too tart for me in contrast with the sweeter oats.

Even though the Breakfast Challenge has ended, I tried something new for breakfast that I received in another package yesterday! Thank you Heather for your awesome giveaway I won!!

Perfect – since I’m completely out of coffee, and I’ve heard great things about this granola (which she threw in for extra 😉 ). Thank you again!!

I cooked up some Muesli this morning. I know traditionally you’re supposed to soak it over night, but the back label also gave instructions on how to cook it. Which is what I did.

  • 1/3 cup Muesli mix
  • 1/3 cup soymilk
  • 2 egg whites
  • Pinch of cinnamon

Topped with:

  • Peanut & Almond butter (yes, I’m crazy)
  • Banana nut cheerios
  • Drizzle of maple syrup

Hmmm…it was chewy. Personally, I’d rather just stick with my normal oats, but perhaps it’s better soaked overnight in yogurt or milk? I’ll try that out next!! I loved the chocolate chips in it though! And there was also a recipe for cookies on the side so I want to try that one 🙂

I quickly got in 20 minutes of upper body weights before heading off to work.

Lunchie was a stuffed bell pepper leftover from the other night. Filled with a Cranberry & Pumpkin seed quinoa mix that I picked up at Costco (details later), and topped with some melty cheese. Snap peas dipped in salsa on the side.

Snacks throughout the afternoon consisted of an unpictured ridiculously mushy nectarine (it mushed into, well, mush when I tried to cut it – very unpicture worthy).

While feeding the kiddos, I got hungry myself and whipped out this bar I got in my giveaway package!

I was really curious to try these “kid’s version” larabars. This was the strawberry flavor and it was quite good! The taste reminded me of those strawberry filled shredded wheat type cereals (did anyone else eat those? There was also a blueberry flavor I think). I loved those cereals!! I don’t think I’ll buy them again though, due to the fact that it was tiny (I put it next to my new phone for reference :-D). It also only had 1 gram of fiber and 2 grams of protein. Ehhh….I can find better. But I do still have a chocolate flavor in my cupboard to eat up! But for a tasty bar – it was yum!

I got off later tonight (at 7:00) than my normal 6:00 time, so I was hangry on my drive home and stopped for a bit of froyo:

Due to the late froyo & bar snackage, I wasn’t very hungry for dinner (surprisingly). I finally made myself eat something at 9:00.  Since I still didn’t have much of an appetite, I just made a 2 egg white, 1 egg omelette. Filled with sauteed onions, turkey & some TJ’s corn salsa. Topped with more corn salsa and feta cheese.

My knees were sore today. Not as sore as they’ve been in the past, but still sore. Blah. So I used some actual ice for this:

I’m wondering why this froyo looks to be chocolate when the label clearly states “creamy vanilla yogurt”. Hmmm…still tasty though!!

So I decided last minute to go home again tomorrow. Yes, I know I just drove back to school Monday morning. But I have 4 days off from work, and I really miss the summer feeling at home. Plus my sister is driving back to school in Washington on Saturday, so I’ll get another chance to hang out and say bye to her. See ya manana!

Oh and I kept forgetting to post what I used in my “frosting” for my french toast (a couple people asked for the recipe).  I pretty much just threw a small container of Chobani, a sprinkle of cinnamon, squirt of maple syrup, a scoop of PB, and a teeny bit of soymilk into the blender and blended.  But I would recommend not adding milk.  Mine turned out too liquidy.

Exciting!!

So I am currently blogging from somewhere new and exciting…my new Iphone!!!! Yup I’m at work and blogging!! Yes you read that right. My trusty old pink razer gave me a good strong 3+ years but I finally decided to move on. I kind of wanted a phone with internet and I’m so glad I went with this one.

I’ll be back tonight with an actual post I’m working on but I just wanted to share my EXCITING new with you all!! 😀
