Hey folks! I know I haven’t been around much lately. In the past week I packed up my entire life at school, and hit the road for home.
Right now, the #1 question asked to me is: “So what are your plans now that you’ve graduated?”
In all honesty, I don’t know. Before I can become a registered dietician, I must complete a 1-2 year long internship at a hospital. Pretty much, it’s almost like attending grad school. More money paid, and no money made! 😉 Until that time comes, I’ve moved home and am currently looking for nutrition related work to give me experience to help me get into said internship. They’re quite competitive!
So what else have I been up to?
Besides unpacking and moving in to share a room with my 9-year old sister (yup – roommates), days have been filled with laying by the pool
4th of July festivities – the parade, during which I melted.
I have no idea how my sister and her team kept up their fancy schmancy gymnastics the whole time.
Or how this person even survived the heat.
Or this person.
Yes. There is a person in there.
And then fireworks/dessert. Here is my failure of a beautiful beautiful cake.
Originally I planned to make this flag cake.
I came across a few problems along the way.
1. My family had no round cake pans. Seriously. I had to use glass pie pans.
2. I forgot to add the food dye to one of the cakes, and had to take it out of the oven and add food coloring a few minutes after I’d already stuck it in the oven.
3. The cakes were too thick to bake. Therefore, I had to over-bake them so the middle would cook. And they ended up sticking to the pans. And falling apart.
4. There was no way I could slice these round cakes down the middle.
Which led to my 3-layer massively huge striped cake!
3 boxes of cake mix and 3 cans of frosting later….
Cake hates me. Remind me never to be a professional baker. Oh well, it all tastes the same, right? 😉
Eaten with copious amounts of ice cream.
Also been on a couple runs – including my long run of 9.5 miles! Which was one of my most difficult runs yet. This heat at home is sure going to take some getting used!
9.5 miles in 1:37.45. I honeslty don’t think I’ve ever ran a run that slow before. Walk breaks galore.
Thank the sweet heavens above for lemonade stands. And thank you past me for sticking a $5 bill in my fuel belt for emergencies. This was definitely one of them.

I also had a mini Clif bar around mile 6 hoping it would give me a bit more energy.
Fail. Run was still hard.
To off-set my hard run, I had an awesome run yesterday!
5 miles in 44:57. BOOYAH. I busted out the last 1/2 mile in an effort to keep it under 9 minute mile pace. It was also the farthest I’ve continuously ran since before my injury. I took only one 1-minute walk break at the halfway mark. I’m slowly getting back to my old running self! (knock on wood)
I also went and saw Eclipse! Have to say, best one yet of the series. It had an actual suspenseful plot. And there were actually scenes where Edward looked…dare I say…attractive? He didn’t have nearly as much makeup painted on as in the past films.
Although Kristen Stewart’s wig was a bit much for me.

Oh well, it entertained me for a good 2 hours.
Are you a good baker? Or do you tend to have bad luck in certain areas?
looks like you had a really fun fourth! and i’d definitely still eat that cake ;]
baking is no problem for me, but for some reason EGGS are beyond my culinary skill. Scrambled is easy enough, but over-easy? Omelettes? God forbid, POACHED? I can’t!
i am a terrible baker. well maybe not but i just hate it so much that i tell myself i am hahah
and i hated that question right after i graduated. i was like “ahhhh leave me alone people!” haha
You may think your cake looks imperfect, but I think it looks incredibleee! Nothing beats a homemade cake, no matter how messy looking it may be 🙂
I like to think I’m a good baker but I’ve definitely had some fails (think brownies that stuck to the pan and I got so frusterated with them that I just stabbed the whole thing over and over with a spatula to relieve stress). It’s all about the taste though!!
shooooot 9 miles would be SO HARD for me even if i was bursting with energy!! haha!! that cake still looks good to me!! girl i know you will figure out your future soon enough- you are so smart!
I suck at baking but hope some day I’m going to be good. I’ll be a revolutionary healthy baker.

I had no idea that you wanted to be an RD! I am headed to grad school in the fall so that I can become one…hopefully internships will ease up on the competition level soon!
I can’t bake cakes either. That one actually looks really good! 😀
Congrats on the runs, girl!! 😀 How has your knee been feeling? Thankfully, mine hasn’t been bothering me too much lately, but it’s still a little wobbly. Ugh…at least I can run, even if my mileage is lower then I would like it to be. 😉
the tortous runs are an unfortunate part of life haha- kudos on the 9 though and glad you had a good 5 miler! that cake is HUGE!!! looks really good!
That cake looks AWESOME!! So big and fluffy- I would def. eat it! And you should be so proud of your run girl…no matter how much you have to run/walk!!

I am usually an alright baker, but a cake like that would be tricky for me. It looks very neat!!!!!
I cannot wait to see Eclipse … but I have to finish reading the book first!
